This episode is a tribute to the German invention of kraut, which was a big deal for the sea faring nations back in time. "Sauerkraut" or fermented cabbage contains a high level of vitamin C, and has a looong shelf life. In a way, it made the discovery of the America's possible by keeping Columbus and his sailors alive for month's of traveling. Stuffing a sausage with kraut is pure genius indeed!

Try adding some Lipton onion soup mix to the Kraut when your cooking. An old Hungarian lady showed me this trick. It really makes a huge difference.

We have actually made these before but after we stuff them we use a meat injector with our favorite beer and shoot it into the center and through out the sausage and then onto the grill they go, and I'll tell you what these are loaded with flavor and so damn good. Awesome video boys!!

If you have a steel rod knife sharpener, it works great for creating the hole in which to stuff the kraut. I use it to stuff some connecuh link sausage into a pork tenderloin then wrap with bacon. That tasted damn good. I've gotta try your kraut stuffed brats now. Thanks for sharing.

I've been rediscovering and enjoying a number of these old videos. I used to watch them frequently. Funny thing is, I would not call them proper barbecue videos. They are really more about grilling in most cases, but I love them. I do get hungry just watching. It's a kind of food porn.

Good to know sauerkraut not only tastes good, but its good for you! A co-worker friend and I were talking about sauerkraut the other day. He said he makes it fresh. I thought it was made like pickles. He said kraut actually "pickles" itself by adding simple ingredients. In other words, it self ferments.

***** I've only eaten kraut from the grocery store. It comes in a bag, a jar or a can. I tend to prefer the sweet kind with caraway seeds--sometimes referred to as "bavarian style." Okay, you're making me hungry for some sauerkraut and kielbasa now. Yum! ;)

This really looks good! How about unsing a harpening steel to make the hole in the sausage? I think that will work, and you can go through the sausage in one go.

Hey guys! I came upon your video and the sausages look good! I have a question. Now cooking sausages make the meat very firm and it's subjective in terms of taste. I like them by the way of grills, pans and and ovens....After everything is cooked and ready, It wouldn't hurt if i decided to cook them another 30-40 in a covered pan with water? I was told if you wanted something different and good, that adding water to them in an inch of water will make the sausages very moist and tender. I had some cooked by someone else and the sausages were outstanding. You guys are amazing in cooking the way you do. Keep up the good work.

+Barton Lee. if ya like moist and very tender pork sausage try this method. Par boiling in my opinion can make the sausage meat more dense and tough...no problem for most in a plain old sausage sandwich..

The key is to smoke the brine, NOT the kraut itself. The brine will retain the smoke and you can get a nice spicy and smokey kraut from it.

ya gain weight with the carbs in beer, not meat protein..! So we limit ourselves to only a 12 pack a day each, except on weekends of course.
