just over a chimney full -about 120 kingsford briquettes was all that was needed to cook up these yard birds, including the sear at the end..! And there was plenty of fire left to keep on cookin' if needed..

I've been making mayo chicken for years (give or take some spices) I recommend everyone try it. You can make it with any cut of bird.

Question... do you add coals during the cooking process or just go with what you started with. Those coals looked pretty fresh at the end when you seared the birds.

That mayo based rub looks really good. I don't usually spatchcock chickens though. There's good meat and skin on the back

Agree..but you can spatchcock leaving the backbone in.. which we often do..

I know i am taking a risk correcting the BBQ Pit Boys veterans, but you should check temp in the meatiest part of the thigh AWAY from the bone, and it only needs to get to 160 degrees F. Videos are great tho, keep `em comin and keep my mouth waterin' Thanks.

I do something similar. But I cut the back bone on one side. There is a lot of flavor in the back. After eating the meat , boil down the rest of carcass. And make chicken and noodles.
