I love to pick asparagus beans when they are the thickness of spaghetti and pickle them in Dill brine. My grandkids call them pickled spaghetti! We just curl them into the jars whole.

Their other name is Yard Long Beans and you may have run across them in oriental cooking... They taste just like green beans...

When you have asparagus seeds do they grow out the first season? I was always told it takes them two years to actually grow.

Asparagus beans are not the same as asparagus. They look like a really long green bean.

Heyas Sue... Asparagus, realistically, can take almost 5 years for a crown to fully mature and produce the type of asparagus you might see in pictures / stores... What you do is plant it it early in the spring when the ground warms... That year, expect small fern plants... The next two years, expect small stems (perhaps 1/8th in diameter) that quickly open up into ferns... The fourth year, expect some 1/4" stems... Pick only the largest, and leave the rest... Year five, you can begin picking fairly regularly, but stop picking when they slow down (or get smaller) and let those fern... In short, you are better to buy 2 or 3 yr old crowns and start there... And just keep in mind that asparagus crowns are quite large when they mature, so it takes a good bit for them to grow from a seed to a well producing crown... // Now, as the other viewer mentioned, these are Asparagus Beans or Yard Long Beans which are just long green beans we hope will grow (they are climbing) and cover the entry trellises...
