These are not the baby bok choys they sell at the grocery store, which are more compact, have more stems and leaves.

Hello. “baby bok choy” can refer to regular bok choy picked when its leaves are small and immature - about 30 to 35 days after germination instead of 50 to 70 days.

That means it has bolted. From temperature or some other stress. Bok choy is susceptible to bolt in hot temperatures.
