Seems like they took too long because u transplanted them. Root vegetables grow better if you don't grow them from seedlings and instead sow the seeds directly were they're gonna grow their whole lives.

Beetroot seeds hold multiple seeds, so the strongest seed needs to be transplanted into its final place

True. Translating takes a while to restart the process, but not essentially. Even under ideal conditions, beetroot supposedly takes around 85-95 days to be fully grown.

Both soils seem hydrophobic at first watering. Has that ever been problematic? Why not seed and up-pot into pre-wetted soil? Or add peat, perlite, or vermiculite? Just curious about your experiences with it.

this is not the right time to grow beetroot specially. try it in the winter season. Do seedlings at the start of winter season. November month.

Your soil mixes seem to be lacking nutrients and from what I can see in your videos the beets show as such. 86 days to have beets you should have in 45 days? Your transplant method seems like an unneeded step thats only causing shock and setting your beets back. This would likely help explain the extra time.

From where did u get the seeds? will the top of a beetroot sprout?

Yes it sprouts just like a carrot, but you have to wait for its flowering then take out the seeds then plant them to get beetroot. Top of the beet gives only plant, but not the beetroot.👍

Great video of the stages and time it takes to grow. I don’t understand why my beet seed packet says 55 days to harvest though.. it clearly takes a lot longer. The seeds i sowed 45 days ago are about 6 inches tall or so. 100 days seems like a more realistic time line.

The time given on the packets is how long it takes after the seeds have germinated and that too under optimum conditions. Also, I would avoid transplanting tap roots as it can completely damage the plant.
