That's what a gardening video should be! Tells you what to do, and when to do it, from beginning (planting the tuber) to end (lifting and storing) Doesn't assume you know things, but doesn't patronise either. Excellent!

Can I leave them in the ground in zone 8b if I cover the area with leaves?

You'd be better to lift them and store them. If you leave them in the ground they are more susceptible to pests and diseases.

It all depends on which variety you choose. For short plants simply choose a dwarf variety.
