i just started 6 weeks ago as a delievery expert. JUst got promoted 5 days ago to manager and begin on this coming monday. I tried it for the first time ( Stretching) and i found it difficult as well. Thank you for sharing the correct sides on the crust, I’ve been making pizza lately and deduced that this way of sides was the very best indeed, yet when I’d watch people on KZbin again and again and again I’d see them ignorantly just going about there business making the top side of the dough the top side of the crust, and they were claiming to be making it the best possible way, thankfully you confirmed how it is and I can rest assured that my instinct or reason was correct

I just saved this video. I've been struggling with how to do this, and this is the simplest demonstration I have seen. The only issue I'm going to have is that I don't have the years of experience so I will (in all likelihood) absolutely mangle more pizza crusts, which I will of course still eat. Such is the price of learning.

@ComradeWhite I believe the way she's stretching her dough out before she(uses her hand as a guide to further stretch the dough) puts it on the screen, it reduces the bubbles. She explains that you can hear the bubbles popping before she begins to stretch the dough.

Youre pretty good at that missy! gave me a few pointers to work with. Noticably you shape it str8 from the rising ball shape, whereas just about everyone Ive seen works the dough again..I will experiment with the results of doing that, but can I ask, is it a second rise?

Diana, I've been making pizza for about five years. I'm getting better at it now a days but I still need to learn how to shape it better than I do and your video really is helpful. I'm gonna make some pizza tomorrow night. How long do you bench rest it? Is that the same as second rise? I take it you did an overnight cold rise fermentation in the fridge, is that right? Thanks.
