Aye! Birds love Elderberries! We've so very many Elders round my way, a good spot, I've harvested & have some Elderflower Champagne on the go as I type.

Perfect timing for me. I am in Wisconsin, zone 5. I have my eye on several areas that I have located on campus of my senior living community. Last year I covered a couple of the trees/bushes with a row cover. It helped keep the birds off my area. I will search your channel to find out when to pick the elder flowers and what the benefits of elder flowers are. Thank you for your time and knowledge.

I understand that the European variety is poison. How do you distinguish between the two?

Do you mean Sambucus nigra? All elders have trace amounts of cyanide in the berries. The amounts are most heavily concentrated in the roots and stems. To neutralize it you must cook your elderberries which is why we never use them raw. Does that help?
