You might be surprised what you can hit in an easy gear, we're only talking for a few seconds. I think he failed to mention that the crazy high cadences are done seated. My normal road riding is generally 70-90rpm depending on effort level, hard climbing up to 100rpm or so, I don't exceed 110rpm in a standing sprint. I recently took a velodrome class that had us on junior gears (48-17 for example) and the first day I hit almost 150rpm. I guess the fixed gear helps too, if you can get a little gear up to a high speed you have no choice but to maintain a crazy cadence haha. And if you have any gentle downhills that can help get you to some really high cadences too. In my own experience bouncing in the saddle is the biggest "rev limiter"
