I have to increase the size of the UEFI.vhdx to 2GB so the macOS will continue to install. After that the installation run seamlessly. Thank you so much NETVN82 for sharing this.

Everything worked great but the screen resolution of the VM is stuck at 1024x768 which is too small but I cannot get the Mac to show any others because it thinks it is a Macbook Air. I need to be able to adjust the resolution.

just go with the flow don't expect that all hyper-v hardware configuration to be without an error the only thing you should edit is your hardware graphic card it will go in to recovery in the end if you want a better EFI just recreate opencore after first install.
