In such situations, I am very grateful to my grandmother who showed me how to knead the dough and at the same time remain clean .She could knead very sticky dough without using any flour, and the final result was a clean surface and clean hands. At that moment it seemed to me that she was doing a miracle.But Now I know that she had to continue to carry kneading so that the gluten developed , and her dough got elastic and strengthened .
My advice is continuing to knead your dough with some resting time, try not to use any flour .
After that I’m sure you will get a smooth and perfect dough with clean hands and clean surface ❤️

This is encouraging! This has happened to me many times and I have thought the dough was wasted. I’ll keep going in the future.

Just in last minute you can use little bit oil to transport in bowl. if your dough still sticky you can always chill it out for one hour in refrigerator, for example for French Brioche recipe, before shaping original recipe requires 2 hours cold fermentation, just to help to manage with dough 😀

I let mine rest for 15 to 20 minutes and use a little olive oil. Works like a charm. Making sure your dough mix is correct makes a huge difference too.

Olive oil helped me today but too much of it can over-soften the dough and leak oil on baking sheet.

I had a problem with my last batch of dough, but my wife pointed out that the problem was with the flour I used. Tried using and all purpose flour, but that was a mistake as there was a lower amount of protein in the flour I was using, thus the gluten structures just wouldn’t form. Also, I admit that I did give up lol. The dough beat me.

Adding flour makes for dryer doughs and a less soft/moist final product
