The Italian cast-on or Italian tubular cast-on creates a super stretchy and totally invisible edge for the 1x1 rib stitch. It's quite the simple method totally suitable for beginners. You can use it for flat projects or projects knit in the round - the repeat will always be the same. You can also use this technique for a 2x2 rib stitch but other than that, it's not all that useful. The tubular cast-on will use this method as a foundation. If you don't want to knit all stitches through back loop in the first row, you have to grab the yarn from below instead of above for a purl stitch.
