Hello Darlings, welcome back to another season of Dining through the Decades!!! In this first episode we are diving into the 1930’s and baking Lemon Pie! I had lots of fun baking and of course making mistakes along the way (but that’s just how baking is, trial and error!)
I hope you enjoy the video and I’ll see you next week for the 2nd episode!
P.s. I forgot to mention the recipe I used is from a 1936 cookbook called The National Mark Calendar of Cooking!
Lots of love,
Sage Xx
Here is the recipe for the Lemon Pie:
3 eggs
1 pint milk
1 oz. granulated sugar
6 oz. castor sugar
1 lemon
1 dessertspoonful cornflour
Puff or short crust pastry
Make a flan case of the pastry and bake it “blind” (fill it with rice or haricot beans in a lining of greased paper and bake) until three-quarters done (I cooked mine for 10 minutes at 180 degrees C/ 356 degrees F).
While it is baking, mix the cornflour with a little milk until it is smooth, and pour over this the boiling milk, stirring it well.
Now add the granulated sugar, the finely grated rind of a lemon and the yolks of the eggs, and stir on a low heat until the mixture thickens. Pour this into the flan case.
Now beat the egg whites as stiffly as possible, stir the castor sugar lightly into them, spread this on top of the pie and bake it in a moderate oven until the meringue is crisp and golden (My pie took 20-25 minutes).
Let cool and enjoy!

I love your videos. They make me feel like I've stepped into a simpler time. I also love how you leave the mess ups in the video. It's totally relatable to me . Some KZbinrs videos are so heavily edited and scripted that you lose the human element. Your videos are a breath of fresh air.

Okay I had to laugh so hard. I cannot even tell you how much I appreciate this video. My Grandma June, who grew up in the 30s, would also make Lemon Meringue Pie! She definitely would double the corn starch and it would thicken up quicker. She would also use more egg whites to do the meringue so that it was extra tall and wispy! The funny thing is that she would always “accidentally” leave a few lemon seeds in her pie so that everyone knew it was homemade. 😅🥰 I miss her very much, she passed away two years ago. ❤️

Separate your eggs one at a time putting each white into a small container. That way you’ll only contaminate one egg white if something goes wrong and not the whole lot. Egg whites won’t fluff up if there is any yolk in there. Especially for a pavlova. 👍🏻 it looks absolutely devine.

One of my family's traditional desserts requires a perfect meringue. Separate each egg using a little custard cup, so if the yolk breaks in you can use it for something else. I also just crack the egg into my hand and let the white run through into the custard cup! Looks yummy, I love lemon!

I absolutely LOVE your videos. They feel like home. As a lady born in 1954 and an avid baker, I hope you don't mind a few helpful hints. They are given with love. When separating eggs, the easiest way is to just use your hand. Crack the egg in a little bowl or cup, then pour the whole thing in your hand. Let the white fall naturally back into the bowl and, presto, a perfectly separated egg. Always strain your custard through a sieve and you'll have no lumps! Spread your meringue right to all edges to form a "seal" and it won't be watery. Your pie sure did look delish!! Keep those videos coming! ❤❤❤

Interestingly many years ago, we were always taught when thickening with flour, cornflour or custard powder, that once the mixture was at boiling point, to remove from the heat, stir in then return to the heat. I think it stopped lumpy problems, so I have always done it. I too love that you show the good and the bad. Let’s us all know we are only human.

Looks amazing :D ... a few tips, hit the egg on the bench not the bowl, you can also use the egg shell to scoop egg that falls in. Also, give short crust a go yourself, its quite easy and fun to make :D

Yes! Counter top to crack the egg means less bits of shell and you can also drop the egg into your hand and let the whites run out between your fingers, tho I still do the egg shell to egg shell technique.

OMG! You are soooo funny, lol! Thanks for the laugh. I watched a KZbin video on how to make butterscotch pie, and the lady put all the ingredients in at once then cooked until thick. I tried it and that's soooo much easier than to temper the egg yolks. It turns out perfect. Also a 1/4 tsp. of cream of tartar makes your meringue really nice too :) Love your videos, thank you !

Yes, I never heard of crispy meringue either. Soft and fluffy. Not baked like this, but put under the broiler for a few minutes until browned on top. Also, never saw milk used. This is more of a lemon cream type pie. This must be an Australian type of pie. Also, an Australian type of meringue. Very interesting to see how recipes developed in different places.

It's definitely a Pavlova style meringue, where it'll have a crust and then be (ideally) fluffy on the inside. It turned out really well for her accidentally putting all the sugar in at once! I would definitely have freaked out 😂

I love to cook and I have the same trouble separating egg whites and yolks. My mom gave me the solution. Look in to Tupperware objects, there's a little separator in a similar form to a spoon where you just crack the egg and makes all the job for you and that prevents any accident. It's an easy and simple design that I have come to love (and I'm mentioning Tupperware because I'm Argentinian and I don't know any australian brand on plastic or metal products 🤣). By the way totally get it when the wipping was delaying. Another mom moment for me: "just keep wipping, it will itself" 🤣🤣🤣🤣

Best crust recipe: The Ugly Crust from The Midpoint Cafe on Route 66! 2 cups all purpose flour 1 teaspoon salt 1 cup butter or Crisco shortening 1/3 cup milk 1 tablespoon white vinegar Sift together the flour and salt in a large mixing bowl. Cut shortening into flour/salt mixture until it resembles cornmeal. In a separate bowl, mix the milk and vinegar together until the milk sours. Pour over the flour mixture and stir until the dough sticks together and forms a ball. Knead just long enough to make smooth, using extra flour as needed. Roll out on a floured board. Yield: 2 pie crusts for 9" pies.

I think I cooked my centre layer a little differently than you did. My very first pie was a complete flop, with a very sloppy centre. After a bit of practice, I would refrigerate the lemon centre for a while, after letting it cool on the stove stop. It made a huge difference. Oh, I used to have the same orange Pyrex that you baked in too- brought back memories! Love from Qld.

I love how you keep in your mistakes, it's so funny, reminds me of my own cooking! Hahaha! So many egg errors. I mean, realistically, I'm not doing ANYTHING again if I don't have to. And your editing is very funny, too. Plus, the intro gets me excited to watch, so nice to see Melbourne in video form :) (I live there too)

That looks so delicious thanks Sage! I love your videos and the new kitchen makes the cooking ones even cuter, for once also the UK is probably jealous of your rain! Have a great week.

lemon merinque is my hubby's favorite pie but never made the filling from scratch. will continue buying package mix but add lemon zest. like how you leave in your video and recover any mistakes made...it's reality! the chicks look so healthy because they eat so well and range free!
