Sounds lovely, there are so many variations... this is a Traditional British Christmas cake recipe, with traditional currants sultanas and raisins. I believe in Scotland they use whiskey traditionally and here in England its predominately Brandy. In some countries they even use pineapple. xx 🥰

Feeding the cake with brandy is done over a period of time. You can soak when warm but it will need feeding a few times prior to decorating or eating. Check out my video on how to feed Christmas cake xx

I want to make a small Christmas cake this year for a couple I'm friends with, and your recipe is perfect. When you feed the cake with the brandy, how much do you pour over it? Also, I live in Australia and we have some delicious dessert wines that would go very well with Christmas cake, such as Orange Muscat and Tokay. Do you think I could put Orange Muscat in the the fruit before making the cake? The other thing I wanted to ask is are there recipes for glace peel because the stuff we get here is inedible!! Hi Amanda, firstly Muscat would be great with this recipe. (Although Brandy is just a little more traditional and fuses slightly better with the decadent flavours of the cake), just Soak the dried fruits prior to baking in around 3 Tablespoons of the Brandy or Muscat. After baking I'd feed the cake with 2 Tablespoons of the dessert wine/ or Brandy once a week up until start of December and then one final time before decorating or cutting. Yes mixed peel isn't great to eat right from the packet it's bitter and strong. Trust me though, once it's soaked overnight and baked in this cake, the flavour is subtle and the peel softens and becomes more delicate. It does add the perfect balance, to make this cake amazing. If you're unsure just add 10g less. But I would recommend adding it. Hope that helps. Please let me know how it goes? Happy Baking 😊 🎂 xxx

Thank you for your lovely comment. I would recommend fresh orange juice as a great non alcoholic substitute. Again dont over do it, between 2 to 4 tablespoon will be enough. Anymore than that will make it too over powering. Hope that helps? Xx

Yes that's right, my recipe doesn't use raising agent. The reason for this, is first, because the taste and texture without raising agent is superior and secondly, sometimes the large amount of fruit and the use of a raising agent, can cause the cake to rise too much and fruit to sink. Hi There Dulanga. This recipe is for 6 inch cake tin 3 inches high. It will be fine, just use same recipe. It will fill the pan to the top and will just need your baking times extending. Hope that helps? X

Firstly, thank you very much for your kind comments 😊 Of course you can add nuts to this recipe, I'd suggest chopping them rather than leaving them whole and to this particular recipe I'd add around 50g - 60g. Add them to the batter at the same time you add the fruit. You can use your favourite, but traditionally Brandy, Whiskey or Rum work so well with recipe. I hope that helps? Happy Baking ❤😊

I'm determined to make one this year with your recipe to make him happy. We don't have Black Treacle here so my husband told me to try with molasse so again not sure how it will come out. If you're intending to feed the cake with Ameretto, leading up to decorating the cake I would not do it as many times as when using Brandy, as it may overpower the cake. @@bakersfun5480 Im not sure if I'm understanding your question fully. Just ensure you make the cake a minimum of a week in advance of when the cake is due. Then feed 1 - 2 tablespoons of brandy daily for 6 -7 days. Hope that helps xx

Hello! I just came across your channel, firstly, congratulations on your new home! I’m also in the process of moving into my first property, I’m disabled & I’m moving into my own little bungalow & I can’t wait! My parents love Christmas cake (& I’m afraid I don’t.. I know I know! But I’m eyeing up some of your other delicious bakes instead for a little cake treat this Christmas !) - my mother sadly got diagnosed with dementia this year, but I’d still love to keep things as normal as I can. She was always the cake baker so I’m a bit daunted, so I’ll be trying your Christmas cake recipe! Just a few questions; does it matter really on the size of the tin? I’d rather use what we have so I just wanted to check. I think ours are just wider & flatter, unsure on size until I have a rummage, but wanted to check regardless. Hi Laura so pleased you found me 😊 Wishing you happiness in your new home too. How lovely of you to continue your mothers tradition of Christmas Cake baking. I'm sure you'll do a wonderful job! Interestingly enough, I will be uploading a video on Monday just for beginners, on what equipment you'll need to make your first ever Christmas Cake. I do cover cake tins in that video, so hit the bell and you'll be notified when I upload. I would recommend investing in at least one 6 inch or 8 inch cake tin that is 3 inches high. Otherwise if its baked in tins that are shallow the baking times will be less otherwise it could burn. And finally in answer to your question on temperature, yes its 140 if it's a fan assisted oven. My 6 inch cake came out rock hard at the sides. I had it in the oven at 325 convection heat for 2 hours 30 minutes. I think for my oven I would check it after 1 hour 30 minutes. It taste great but crunchy so I am going to try again and bake it less time.

You'd need to increase ingredients, so you're better off using my 8 inch christmas cake recipe if you have a 7 inch square tin. If you only have a 6 inch square tin, when using 8 inch cake recipe, there will be a little left over. So you can always make yourself a little tester cake too. X
