@@robertgoh7420 I usually only use salted butter to enhance taste. As this is such a rich decadent cake, you really dont need salted butter, simply because the flavour would be lost amongst all the other ingredients xx

You can use a super market brown bag round the cake.Cutting the bottom off and making a strip 8 inches above the cake pan.Use string to tie.

The lady who very kindly made a Christmas cake for our family every year for as far back as I can remember sadly died recently. Everytime I walk by my 10" cake on the kitchen table, I want to cut a piece for myself. I baked it on Dec 22 and do not plan to cut it till Jan 8 or 9 to share. I want to feed it enough brandy. I am planning to buy 2 x 200g pkges of marzipan as you suggested. Hopefully this gives me enough for a decent thickness to cover the top of the cake. A naked Christmas Cake !!!! lol

Exciting isn't it - Is your cake smelling good? It's a shame they don't do 250g or 500g packs as a 500g would give you around half an inch of marzipan... but saying that, 400g will give you a healthy thickness. I made an 8" and two 4" cakes today using 10" mix, came out perfect apart from when I opened the cupboard and realised I'd forgot to add black treacle and syrup 🤣 I will keep this recipe in my book and leave a note to myself about missing ingredients

Hi I've got this mixture soaking in brandy but changed my mind on a ten inch. Can I put some mixture in an 8" tin and some left over just to make a tiny baked bean tin cake. I save small tins to make tiny cakes as gifts for some elderly people. I do wash bean juice out first 🤣 x

Yes, 140 is quite low for a very dense fruit cake, so it does take hours and amazingly it doesn't burn either 🥰

Hi my issue when making a Christmas cake in the past is that it looks cooked and is firm to the touch but when I cut into it it sometimes looks like it needs a bit longer in the oven although I’m never sure whether this is just because the cake is moist because of the fruit. I’ve tried the skewer and it comes out mostly clean although a little bit sticky but it looks like this could be from the fruit rather than the cake batter. I don’t have a fan assisted oven so will try your recommendation of 160 degrees.

When making your cake, ensure you dont over soak your fruit the night before. Just follow my recipe, at the beginning, I discuss the amount of brandy you need to add the night before. If you make it too wet it takes longer in the oven and can burn on the outside but still remains soft in the centre. Also dont cover the top of the cake, it really doesn't need parchment paper adding to the top of cake. Just cover the sides and bottom of the cake, as per my video. Good luck and keep me posted xxx

Ok. All the fruit is sitting in 6 Tbsps of brandy plus all the spills from measuring each spoon!!! lol I will bake the cake when I get delivery of my 10 x 3 cake tin tomorrow. So fruit will be soaked from 4:15 today till delivery tomorrow. Yay!!!!

Hello, MysteryBaker! I could not find a 10 x 3 cake pan so ordered one on Amazon late last night with delivery date tomorrow, Monday. I have all the ingredients and am ready to soak the fruit today. So excited to be making a Christmas cake after so many years. I was thinking of soaking my fruits in a crockpot / slow cooker. That's airtight. That should be ok?

Oh exciting stuff Jennifer! So you'll be baking anytime soon then? 🥰 I really have never used a slow cooker for my dried fruits, so I'd not be able to confidently say yes!! Personally, there is no need. Simply place in a bowl add your glugs of brandy, stir well, cover in cling film and leave overnight for that liquor to soak into the fruit and plump them up. But if it's a method you've used before, then hey go for it. I'm just worried that being in a slow cooker and having to soak for a long time, they may become liquefied, but again I've never tried. Good luck for tomorrow and please keep me posted. Feeding the cake after its baked will add to softening of the fruit, that's my preferred way xxx

After it's baked, I will wait a couple of days before I start feeding it with brandy as you suggested. After that 2-3 Tbsps daily till the day I cut it or shall I stop the day before? I guess I should stop the day before? I am baking the cake tomorrow as soon as the cake tin is delivered.

Just follow my instructions and dont be shy with the black treacle ha!! You can always just brush some brandy over the cake on the day you eat it, it gives it a lovely dark glow as it were and it'll look magnificent on your dinner table xxx

Oooh lol you're testing my culinary knowledge here 😂 I'd use Molasses which is equivalent of the UK'sblack treacle. If I remember rightly, blackstrap, is less sweet and has a more bitter salty edge. So yeah use regular molasses lol xxx

It's tomorrow now so cake is out and cooled. Took about 5 hours and yet looks paler than yours. Did you use dark soft brown sugar, or even muscovado sugar? Most important thing is that it is a good height, so thank you very much for the tutorial

I will be making this cake this weekend!!! Can I use a 14 x 9 x 2" pan instead of the 10" pan? And what temperature and for how long? If not, I will buy a 10" pan. Your cake looks so nice and dark. I lived in England for 13 years and made my one and only fruit cake back then. It was a really good one.

It's entirely upto you, and yes you could use this in a 14 x 9 x 2, but it will be slightly less volume of cake mixture. The recipe for this cake will fill 10 x 3 inch pan to almost the top. Oh well you won't be disappointed with this recipe... remember to add 2 'extremely generous' tablespoons of black treacle lol That will ensure its deep rich colour. @@MysteryBaker The cooking time will still be the same for the 14x9 pan, correct? I just ordered the ingredients online to pick up tomorrow. I just have to find black treacle somewhere. I am in Toronto, Canada. What's a good substitute? Molasses? I bought some Golden Syrup recently because I was remembering those lovely steamed puddings when I lived there. I will let you know how it turned out. I won't cut till New Year's Eve so that I can let it absorb the brandy or rum for a good few days. Thank you so much.

@@Jennifer-oz8ec It could take slightly less so check at 3hrs 45 mins and then use your own judgement, checking regularly after that if you feel it needs longer. it should be an even dark golden brown colour. Place skewer in centre if it comes out perfectly clean, you know it's ready. Molasses is a perfect substitute. Ooh yes remember to feed and again let me know how it goes xxx

Hi Bella, you can use my 10 inch recipe in a 9 inch pan. You'll have a little over to make a small tester cake if you'd like. It may need a little less cooking time, if you dont use all the mixture, I'd say check the oven in 3 hrs and go from there. Instead of treacle just use Molasses, which I believe is black treacles equivalent. I hope that helps? xx

Question for you - why do some people feed the cake with their chosen liquor the day it comes out of the oven? What is the difference between immediate feeding when the cake has cooled down and waiting a couple of days before feeding the cake with liquor. Curious me ! :-)

Erm, if you mean they add liquor as soon as it's out of the oven and still hot, then I see no point lol as the heat from this cake will burn away the alcohol leaving just a brandy flavour. If they do it straight away then it must be personal preference I suppose. For me I like the cake to have time to rest first but more importantly it's all about timing. If I've made my cake in October, let's say... I dont really need to start feeding the cake until November. The thing is with any cake, over feeding will or can ruin the cake. It becomes sodden rather than moist and too much alcohol will spoil the beautiful flavours that already exist. So in a nutshell, it's about getting that balance right... the cake is best with a moist brandy flavour that seems to enhance the Christmas flavours in the cake... rather than loads of alcohol that drowns it. Hope that makes sense, I know I ramble sometimes lol xx

No it doesn't have opening but if you line the entire tin with (including the bottom) greaseproof paper it will turn out without any problem. I grease my tin with butter before adding the greaseproof paper. Hope that helps? Xx

Is it too late to make this this weekend/Monday 11th July for a wedding cake on 1st August 2022? If its not too late how often should i feed it and when do i stop feeding and when Can I cover it with marzipan and fondant? Thanks Jackie x

Hi Jackie, absolutely, make the cake this weekend and feed it once a week (try not to over feed). Then decorate with marzipan and fondant few days prior to wedding. I've numerous wedding/Christmas cake tutorials, including how to decorate with fondant and marzipan, so check them out. Hope that helps? Xx

@@MysteryBaker Thanks for your fast reply, much appreciated, I tried my nanas Christmas cake recipe and it was a bit crumbly which i don't want, does the feeding help this, hope so as I don't now have time to practice and want my friends wedding cake to be as perfect as possible, Im using rum instead of Brandy, also need to find myself a tin or something to store it in, how deep does the 10 inch cake turn out please? @@jackieworthington6892 The feeding will help but using large fruit such as sultanas will always cause a little crumbling when cutting. My mixture will fill a 10" x 3" high cake tin. Let me know how it goes 🎂🥂🎁 xx

The feeding of the cake. After pouring the alcohol on top of the cake, do i need to leave it to dry before covering it? Which paper should i use to cover the cake.

Leave it for a minute or two, then you can cover. I recommend greaseproof paper as its non stick and paper allows the cake to breath xx

Claudette Christian just to add if it's not ready then keep adding 15 minute increments to the cooking time until your satisfied it's ready x

@@sarahellis1500 Oooh wonderful let me know how it goes. You can add nuts if you wish, I dont simply because I prefer a smoother bite and dont enjoy the crunch. But feel free to do so. Yes I have my own recipe that I add ground almonds to, but as this is for beginners, I dont want it to have a complex list of ingredients and to be fair theres not a real significant difference with the taste xx hope that helps? Hi Liza Hilda here good morning.. 'just wanted to check if the qty for blank treacle. Golden syrup mixed spice and nutmeg.. Is the qty sufficient for this large qty.?

Morning 😀 1 to 2 heaped tbsp of black treacle, half to 1 tbsp of golden syrup (optional), level teaspoon of mixed spice (dont be tempted to put more spice in, as it is extremely powerful) xx

@@hildafernandes3910 I say optional because some countries cant get hold of it. I use it in all my Christmas cakes as it adds just that little extra to the richness of the cake. Xx

@@hildafernandes3910 I use it on pancakes like you would maple syrup, it makes flapjacks and yes granola bars oh and treacle pudding .... I put in my porridge instead of sugar x xx To be honest it's the black treacle that wont be used much. X

IVE WILL IVE GOT MY RAISINS IN SOAK WITH BRANDY NOW SO WHAT DO I PRE HEAT THE OVEN TO AND WHAT TEMP DO I BAKE IT AND FOR HOW LONG I ASK THIS BECAUSE I MADE ONE YESTERDAY WITHOUT THE BRANDY OR SPICES AND IBAKED IT AT 180 FOR 45 MINS THEN THE BERO BOOK SAID 150 FOR 3,5 HOURS WELL GOOD JOB I WAS WATCHING IT AS IT WAS DONE AFTER 1 HOUR AND THANK YOU FOR YOU KIND REPLY REGARDS KEITH

@@leonroberts5556 if you are using a 10 inch cake tin and using the weights in my recipe you will need it on 140 if it is a fan assisted oven. At 3 hours check the cake but not before. Place cocktail stick or knife in centre of cake if it comes out clean it's ready. If not keep it in oven for 15 mins and check again. Repeat this process until the stick or knife comes out clean. I'm not quite sure if I'm understanding your question but the 6 inch version would come in around 1kg if you were to add the measurements together. Can I ask, why you need the weight? Thanks

@@bakersfun5480 I'd suggest the 8 inch Christmas cake recipe. If you add all the dried fruit including peel and cherries, sultanas, currants and raisins it comes in around 1kg, hope that helps you? Xx

Just use golden syrup, if you need to darken your cake use a bit of gravy browning.Please don't mistake this for gravy salt,it is in a bottle.

Thank you so much xx Oh its never to early for alcohol ! 😂 On a serious note, I'd only feed it once a fortnight during September through to mid October building up to once a week Through November and December. I hope if you do try my recipe, that you keep me posted on how it went xxx
