With the avocado ripening thing... if you want your avocado to ripen, leave it in a bowl on the counter with bananas or apples (any fruit or vegetable that emits ethylene will ripen those around it). I usually put them under my bananas when I want them to ripen quickly. When my avocados are ALMOST ripe or just ripe, I put them in the fridge away from other fruits and vegetables and it extends that 'perfect window' for at least another day or two!
