This is one of the most beautiful omelettes I've seen and it looks so delish! Question, when you removed the butter/oil combo after cooking the mushrooms, I decided you must not want to cook your eggs with any extra fat. But, then you added more butter/oil to the pan. My question is why you didn't just use the butter/oil left after cooking the 'shrooms?
