This is a great and important design point. There’s that game dev quote about ‘making a puddle with the depth of an ocean, rather than a sea the depth of a puddle’ - sekiro is a beautiful example of that

I haven't beaten either, to be honest, but I find Sekiro a lot more fun than Elden Ring due to the lack of options. In Elden Ring, with how open-ended it is, I never understand if I'm "supposed" to be fighting a boss yet. Is my difficulty with it a skill issue, or is it supposed to be hard to encourage me to explore more and come back later? How much should I be exploring? What if I come back and I'm too powerful and steamroll the boss? That can be fun sometimes, but it's rarely as much fun as a proper, curated challenge. Sekiro, on the other hand, is a game where I know that at all times I have every tool I need to beat a boss as intended, so it just comes down to getting good.

Sekiro was the first from software game I'd ever played and my first playthrough was brutal, 2nd playthrough was difficult, 3rd playthrough was easy and my 4th it was like I was using cheat codes lol

*IMMENSE GASP* HUZZAH!! A NON-TWEWY VIDEO-- aight, I'll shut up 'bout that. Video seems pretty fancy though, I always thought limitations inspired creativity and challenge in any cultural medium.
