I love to brine. I like to brine chickens to roast, too. This brine looks incredible. I am using it this year. I use a cooler, too, especially for larger birds. I am thankful you two are well.

Wonderful! I love brining the turkey. I air chilled for the first time last year didn't come out as dry but was still great. I also inject my turkey and wow an even better pop of flavor. I also rest the turkey for amount of time cooked. Have you ever tried injection? I highly recommend but it isn't necessary. You both are great thanks for the videos!

Great video. What if you only have 14 hours between getting a fresh turkey and needing to start roasting it? How long would you brine it for and how long would you air chill it? Also, any thoughts on roasting breast side down after crisping up the skin?

Split the time in half. 7 hours for brining and 7 hours for air chill. Be sure to allow enough time for roasting! Not sure about roasting breast side down. We've always kept the bird breast-side up, but, maybe there's an advantage to flipping the bird at some point? Could be challenging, but, it's interesting!!!
