He's literally not. These videos are largely improvised. Andrew Rea's videos use, at the very least, multiple voice takes. They're carefully planned out. If you've seen the Toups + Rea video on Binging with Babish, you'll see that Rea is actually not all that good at improvising, and actually not all that comfortable with Toups' potentially un-pc jokes. Very different video styles, very different people.

Watched this video a couple days ago, and revisited it just now to make my first completely successful Mayo. Thanks for the pro tip! Instead of vinegar, I did lemon juice. All the other measurements are the same (4 egg yolks is great), much to the chagrin of natural instinct to just throw shit in till it feels right. If you want to make perfect mayo for the first time, watch this; do this.

I remember when I first saw Isaac on an Action Bronson episode of Fuck That's Delicious where Action Bronson ate at his restaurant and I remember thinking, Isaac is a STAR. He's so badass and authentic and real and he's everything I love about the food world. It's so amazing to finally see Isaac getting these amazing features. He truly deserves all the spotlight!!

Slice tomatoes and place slices in layers of paper towel after applying a layer of salt and black pepper. Allow to let sit at least 10 mins and lightly press. Great textured tomato slices ready for any sandwich or frying

Maan, I watched the whole thing waiting for him to suggest how to get the bread right and he kinda just glossed over it. Getting the bread right is the hardest part. So far, the closest thing I've found outside of Nola is Ban Mi bread so if you've got a vietnamese market around, (or the Bahn Mi chain) you can at least get close.
