His restaurant is awesome. My girlfriend and I were in New Orleans and got to eat there and wouldn't you know it the chef was there. Super glad he stopped and said hello even though he had a sick kid. Great experience and amazing man and food!!

My fiancee and I went to Toups' Meatery back in June and got the charcuterie board. The mixture of fat, acid, and sweet in each bite was absolutely phenomenal and the spicy marg was a perfect blend of sensations!

When you break the mayo, you can of course pretend its just oil and send it back to new yolks. If you do the tall, stab blender method, you just put the pot back into the fridge for a while, and it separates back to its levels. Something I have not seen in print, just worked it out intuitively.

lol i was a sous-chef @ a little Italian place in my teens and into my mid 20's . The owner "chef" enjoyed his gambling, whenever he would see left over in the food possessor, mixing bucket sauce pot , he would say "that's f***ing Vegas right there " and grab a spatula and scrap that shit out as he was yelling at us about how that's his gambling money. this gave me flash backs 20 years later lol

I met Isaac at Toups Meatery while visiting New Orleans. He is such a genuinely cool dude, he took time to come out from the kitchen just to talk to me (my wife let the server know I was a fan, think how you tell them its your birthday) I completely fan-girled, forgot to breathe, didn't think to ask for a picture or anything. Top 10 biggest regrets. Next time...I'll be prepared
