Nice recipe! I love pumpkin spice. But filling the pot with boiled water doesn't allow enough time to bloom the coffee or for the gasses to create the right kind of pressure. Also it can damage the valve and scald your hand when you screw the pot together. You never cook it on high heat! The correct traditional Italian way, since 1933, produces consistently perfect coffee that's never burnt nor bitter: Fill the pot to the bottom of the pressure valve with cold or room temperature filtered water. Fill the basket loosely with coffee to the rim, then level it even with the rim using your finger or spoon handle; but without pressing, packing, or tamping. Leave it loose so the water can flow through. Do not "preinfuse your beans"! By starting with cold water and cooking it low and slow your coffee will bloom automatically. You prevent your coffee from getting scorched or bitter by making sure the heat is a low gas flame or a medium electric stove. Remove it from the heat immediately when you hear it start to gurgle, or just before it starts to gurgle if you've learned to recognize the signs. The pot will finish filling off the stove from the heat inside. Stir the coffee with a teaspoon to mix the first most-concentrated coffee will the last least-concentrated coffee, and pour immediately. These hacks that have spread though the Specialty Coffee community are wrong, unnecessary, do NOT make the coffee taste better but make it worse! I think James Hoffman started the hacks, but he admitted he doesn't understand the Moka and he even said, "It broke me!" It's obvious by what he says that he never learned to use the Moka correctly in the first place, so he had to compensate for poor technique by inventing hacks that make no sense.

Yeah, the tip about putting hot water in the bottom first is the worst one for me. Genuinely pointless, and if anything just abjectly dangerous. I literally put water in the bottom chamber, fill the basket, put two filters (not necessary, but I like it), and then bam. Simple as. Almost burnt my hand pretty good trying to try one of these hacky methods

It is dangerous to handle the base filled with boiling hot water, which is 212°F - much higher than the ideal brewing temperature for espresso and coffee, which is 195°F to 205°F. I forgot to mention I also like the videos: "Il Barista Italiano Detailed Moka" and "illy Moka coffee@home." They're among the very few that show correct technique.

I have a moka pot but can't seem to get rid of the acidic taste. I do everything you do, minus the blooming with water, and even run the pot under cold water when bubbles start to appear. Any tips?

Your coffee ground needs to be finer. I would also suggest to try it with medium to low heat

I don’t use soap to clean it. Just rinse with purified water. It helps to keep the oils from previous brews in place while also keeping a good season to the aluminum as well. I had almost 5 months of bad espresso because of soap washing the coating away and leaving a gross taste behind. Maybe don’t put it on high because you could easily burn it as well.

Try on a lower heat and with a finer grind! Every coffee bean will have a different optimal recipe. Also tweak parameters individually as they both contribute and it helps to have a control constant

I love this Ethan, but won't the high heat cause under extraction? I do find that my coffee ends up over extracted on a low heat but I've had sour Moka pot coffee before from the heat being too high, and find a medium heat is a good starting point

It's supposed to cook on a low glass flame or medium electric stove. Your coffee problems will all be fixed if you learn the correct traditional Italian way to do it since 1933. Search for "Annalisa J Moka pot" video and try it her way.

For small scale operations as in a coffee cart I think it may work but think about any amount of quantity or pace and suddenly you require 8 stove tops all with 6 cup Moka pots on them

I thought the Mika pot had to be run under water after taking it off the stove?

Yes, the bottom needs to be run under cold water for a few seconds when off the stove. But that’s not the only thing he messed up. 1. You don’t need to put boiling water in the base of the pot, it’s a pot, the water is supposed to boil when you put it on the stove. 2. Never, EVER put water on the coffee grounds in the funnel. Once again, it’s a pot, let the water do its job 😂 3. He took it off the stove too quickly, the espresso is done only when the pot starts making a noise (whistling) indicating all the water has evaporated. Pleases follow these instructions if you want proper Italian espresso and not watered down Starbucks coffee. 🙏🏽

horribly wrong dont use boiling water or else ur coffee becomes weak taste room temp water or cold but not too cold is enough and set the stove from low to medium heat and for god sake keep the lid close just wait until u heard it inside turn off stove and let it sit for a moment stir ur coffee inside the moka pot pour ur coffee and u can rinse it on running water
