That's how I made Reuben sandwiches at the apple tree restaurant in Cortez, Colorado. It was located in the Ramada Inn. Delicious sandwich.

@mark9111111 It's Russian Dressing. Kind of like Thousand Island only a little more tangy and no pickle chunks. Some people use Thousand Island on the Reuben - but we prefer the Russian.

Agree with Don C ----- quickest, easiest and best demonstrated Rueben assembly. The only thing I do differently is give it a lil more heat i like it hot! Excellent --- now I'm really friggin hungry.

11 years later and I've finally discovered the Reuben... (You won't like 2020 BTW...lol). Drying out the sauerkraut is key. A soggy sandwich sucks! But I don't like the taste of Rye Bread so I use whole wheat, but still do the grilling thing exactly like this recipe... I call it a ,"Wueuben"....lol!

Thank you for the tutorial, I am so making some tonight for myself and my girlfriend. The marble rye in this instance makes the sandwich oh-so-delectable-looking, but instead I bought a Hungarian Rye from a local baker to use, instead. Hope it turns out!

I have one problem with this and that is I don't have a frying pan big enough to heat up the bread and the meat and sauerkraut up. Though I probably be able to use two frying pans as I do have two frying pans, will have to try this.

It depends on how moist the meat it. When it's just going to be on there for a few seconds, I don't add any additional oil or butter.

Protip: Wrap the sammich tight with paper before you slice it. Then wrap it with a final piece of paper. Other than that, this demo was flawless.

Is that grill that dirty from only one day?? I used to work in a deli when I was a teenager and we had to clean the grill EVERY night with some type of stone, and I mean I had to scrub scour it with that stone until it looked brand spankin' new. Just wondering.

Chip Bridgeville stuff will stick instantly. This is a lovely seasoned griddle. As long as you clean it with water and scrape away carbon once a week (you obviousoly remove gunge as you go) it's fine. I have 2 large griddles and they both get cleaned and scraped daily....but they both remain brown. If you get it back to silver it will look like this again after 15 minutes. It doesn't hurt though to take it back to silver every now and then.

A layer of grease isn't bad for the grill, doesn't impart any filth to the food, and actually can increase flavor. Humans in the modern world have unrealistic notions of pristine cooking conditions. Once you go camping for a few weeks at a time, carrying your food and gear on your back, you'll realize you can do with a fair amount of dirt and grime in your food, and it won't do much to ya. In conclusion, get over your selves.
