tried to make chicken, cream gratin potatoes and sauce for valentines. The chicken and potatoes turned out perfect, but when i attempted the sauce, i put the chicken bones with meat on them straight into the pot, and put milk, stocking and spices on it and directly started boiling the sauce. What i didnt do, of course, was to unfoam the bones before making sauce, so all of the protein, blood and foam coagulated in the sauce, giving it a weird meaty taste. My GF came to my rescue, made a bechamel out of it, and put in like...7 different spices, among them turmeric, anis, paprika, and others, in the end, making my sauce taste exactly like a Bernaise

May I do it then when it's cooler put it into the plastic ice dice shape and refrigeration to get dice ready to warm in microwave each time I'm gonna to make chicken breast roasted on piastra? I don't wanna to spend time for sauce every time but it sound very tasty yours.

@Supa Trending Daily the acidity of wine or other deglazing liquids will damage a cast iron pan. stainless steel pans should be used

cast iron is even better. be sure the pan is up to heat tho. stainless steel heats quicker, so the the innards of the breast tend not to be as cooked as the rest. simply slice the breast in half length ways for better results. what would you serves with it? potatoes? greens?

I would add the butter just right before taking the pan of the heat. Heating up the butter i found it to taste greasy and fatty.

Meh, cook the chicken with olive oil, when done add some butter, then deglaze with a splash of vinegar, mix around and pour over your chicken breast. Simple, delicious and truly does only require stuff you'll have in your kitchen.

I tried 1/4 cup white wine and 2T lemon juice (to 1c stock ) which worked well, but you can always have more lemon (added after reduction of course)! I also fried some shallots before de-glazing. There is so much you can do with this base.

Are you kidding me with that piddly ass piece of butter? Not to mention that sauce was nowhere near thick enough. The chicken was practically splashing in it. Now I'm just nitpicking, but why the breast? It is by far the most boring and bland piece of meat known to man. For the love of god, at least use the thigh.

Thank you. Added butter at the wrong time. Didn't reduce enough, even though sauce will thicken as it cools not that much that was a watery mess. Gaurentee it will taste over flavored and soupy

After browning, you need to put the breasts in oven at 400 for 8-10 minutes to reach 165.
