Do you by chance remember a couplemof drinks called a pussycat and a tomcat? I was quite young when my Dad would make them. All that I recall is one was orange flavored and one was peach flavored. I think they had a powder mix of some sort? (Yes, I was allowed a sip every now and then. The world was a vastly different place.)

A Tom Collins is not traditionally made with 7up or sprite, however, many of my guests over the years have often ordered it that way. Everybody's tastes are different so, considering how many I've made that way, I'd still call it a Tom Collins. Cheers!

The syrup looks more like a gomme than a rich syrup. Am I crazy?

It is a rich syrup. Actually, it's a rich Demerara syrup. Perhaps the consistency is thicker than normal and presents itself more like a Gomme syrup however, I didn't use any gum Arabic to make it. True Gomme syrup contains an emulsifier known as gum arabic. Cheers!

Just like the cocktail's origins, confusion over whether to build or shake a Tom Collins is still debated today. Bartenders throughout history have been using both methods to make a Tom Collins. Possibly, the first published Tom Collins recipe appears in Harry Johnson's 1882 book, "New and Improved Bartender’s Manual or How to Mix Drinks of the Present Style". In his recipe he builds it. Yet, Jerry Thomas who is considered "the father of American mixology," shakes it in his book "Bar-Tender's Guide from 1887". I believe either method of building or shaking a Tom Collins will produce an enjoyable, refreshing drink. The reason I shake my Tom Collins is that shaking produces a colder cocktail quicker than building it. It's as simple as that. Cheers!
