@@shiajinn2509 Wheat flour which is made of whole wheat grains is commonly used in Indian homes in daily food items such as Chappatti & Paratha . Maida which is the ultra refined starchy white part of wheat grain without the bran is mostly used for food items that are crisp / crumbly such as Naan, Bhatura , Samosa. Indians do not use Maida in regular food as its considered to be unhealthy compared to wheat flour

When you start learning, it's better to measure everything to get good results. Eventually you just learn to measure instinctively. This way you learn fast and be consistent. Our moms just had more time to learn by hit and trial, professional chefs don't. There is nothing wrong in there.

[No need to be gentle with these potatoes] and peel them after it. + Add whatever you want as per your preference. 2. Dough processer for obvious reasons. 3. Make two rotis and place mashed potatoes in middle. 4. Cook Voilà! The dish is ready ❤

I don't know about you, but I lived in Jalandhar for three years and I have seen parathas made with maida. Mostly tandoor paranthas, sometimes with refined super fine flour (all-purpose flour). But yes, most households use whole wheat flour.

Please don’t follow these recipes. If somebody starts to measure everything and use electronics fpr everything, consider it a big red flag when it comes to indian cooking. I agree that not everybody cooks the same way, but there’s always a common practice. The common practice here is to use whole wheat flour. The dough is kneaded by hand, and no matter what, ot would always taste better with pickle, then with salad..

Better, just search for the indian cooks and their method of cooking. Without the exact measurements, it might be off a few times from perfect, but trust me, once you get the appropriation of the ingredients, it would taste a thousand times better than the way of cooking in this video.

Quick tips if you want a simple version with easily available ingredients: 1. Boil potatoes and prepare dough as instructed. 2. Mash the potatoes and add salt, paprika or pepper. Nothing else. This is how most Indians do it. 3. There is no need for precise mesaurements with ruler. Dust the dough ball in some flour. Roll to the size of your palm (it should be round). 4. Cover the potato ball with the dough and gently roll (gently or the dough will tear). 5.For beginners, the smaller the potato ball in relation to dough the better. If you used too much potato stuffing in relation to the dough, the dough may tear. If the tears are small, you can ignore it cook as usual. 6. Roll after covering the stuffing with the dough roll in the shape of a circle whose diameter is the distance between the tip of your middle finger and the base of your palm. 7. Cook on cast iron or non-stick pan. Season with BUTTER.

A punjabi mom's recipe would have done wonders. Nobody can do aloo parathas better than Punjabis. Also, whole wheat is way better than AP for aloo paratha and add a little roasted whole crushed coriander and diced onions. It takes the parathas to a whole new level.

It's so pleasing and soothing to see "Ladies Across Sea" making Aloo Paratha. The way with which 'the chef' explained everything is so nice and her voice too is so soothing. The anchor too did her great job in assisting her. I must say, I was most curious to know how they were able to roll "Masala Aloo filled Dough" to shape it in perfect circular shape. Glad to see that, they did an extremely great job.

Erin did a great job here! of course, specific recipes can vary from even one house to the next, but this was still good! - y'all are in Boston, surely there are plenty of Indian grocery stores where they sell Indian spicy chillies? - ok, your friend's mom uses _maida_ and that's why you followed that here using AP flour, but the majority of _parathas_ are made with _atta_ (stone-ground whole wheat flour)

Hardcore Punjabi here (pronounced Panj-aab not Pun-jaab btw). Generally very accurate but this recipe has south Indian twist as never ever known paratha served with onion tomatoes salsa thing. Coconut doesnt go into any Punjabi dishes. We serve paratha with tons of home made yoghurt, a tub of butter and lots of achar. Yum yum.

I suate my spices, ginger and garlic first in a couple of tablespoons ghee or oil for a couple of minutes, then add the potatoes plus a 1/4 tspn of turmeric, 1tsp of salt, cilantro and mix it all in the pan.. no raw spice taste and much better combining of flavors. As said, there are many ways of making aloo paratha, varying from region to region and every family seems to have their own favorite. Thanks TK for featuring a wonderful Indian staple. 👍

Stuffed parathas are generally enjoyed with Chutneys of sweet & spicy kind. The most famous two chutneys that go with stuffed parathas are Coriander-Mint Chutney, and Tamarind Sweet & Tangy Chutney. A tomato-onion salad of this kind is not something that I have ever seen.
India is Vegetarian's heaven....no doubt -- there are more then 2000 types of dishes ...

Krish Ashok in his wonderful book on the chemistry behind Indian cooking ("Masala Lab") said that if someone rags on you that "your" version of ANY Indian dish is NOT authentic that you have his permission to punch them in the head. He also has a super-entertaining KZbin channel that deals with really stupid food myths.

As a Pakistani who had the chance to spend over two years living in India, this is frustrating. I see Americans who are so obsessed with getting things exactly right in their mind and being food police that they end up frozen in fear. Food and home cooking now seem inaccessible. ATK empowers people to plan fresh ideas for weeknight dinners that bring families together, keep food costs lower and bring salt and sugar intake in check (fast food is the cause of all the blood pressure and diabetes issues- not home cooking). I have found that the foodie purists are often eating frozen dinners or from a drive through.

In India most of the time to cook the potatoes the pressure cooker is used. It takes less time & you need not to cut the potatoes in pieces. Happy to see you trying food other than American food. Rolling Pin ( in Hindi Belan, & in Marathi Latan) is used which is more comfortable to use than that big wooden roller.

I love eating mine with with sour cream ❤ another way to eat it is with a little bit of south Asian pickle. Mango pickle, lime pickle, mixed veg pickle, etc.

This is my staple go to breakfast. Quick and easy. I always use whole wheat flour like most Indians and the stuffing is always different. So there is gobi-aloo paratha, gobi paratha, aloo-pyaz-paneer paratha etc etc. Good to see that you are so meticulous with the recipe.
