Absolutely beautiful. I'll start now by saying I was skeptical at how this would turn out, especially how courgettes have a tendency to be squishy and not particularly a great texture when cooked, but oh my word this worked!! I have a 4 and 10 year old, after we had eaten we requested the wife make this again the next day, it was perfect. I kid you not, as a curry aholohic I eat my fair share from homemade to restaurants and take aways in a month, I would happily ditch those, ditch the chicken or meat and roll with this. It seriously needs biggin up and trying, especially if like me, you are skeptical about courgettes in anything really. Well done 👏 an awesome recipe that has made it possible for me to eat curry more often as its a hit with the wife and kids ❤

I get a delivery of vegetables from Oddbox and I have quite a few courgettes I need to use before the next delivery. I usually fry them in butter, salt, pepper and garlic. Thanks for the recipe.

Hi there, it's because my homemade garam masala is heavily cumin based. So I just add that in the end and it doesn't require additional cumin.

Well I have just finished a bowl of this zucchini curry. Very tasty. I did add a small portion of cauliflower and butternut squash that I needed to use up but it really had a kick of heat in a good way.

Be aware that you have a thick British accent and you talk very fast. Sometimes when I don't understand things, I suspect it is not your accent. British English uses different words than other forms of English. I'm a linguist and a retired university professor in Japan - I've been here over 35 years. After teaching for a while, I stopped correcting my students on everything. I just made them aware of other what speakers of other dialects of English would understand. Yes, I do hold a US passport, but it was not my goal to teach the American dialect of English. I wanted them to be fluent speakers of an International Dialect of English so as many people as possible could understand them.
