I wonder if the thicker slice and searing on high heat helped to keep the zucchini from turning soggy during frying? Or is just because you are a great cook! Never thought to use paprika....will try it all your way next time as I really enjoy this dish. Many thanks.

That’s right, thicker slices prevent the zucchini from getting soggy. Also keep in mind, when you add the salt the zucchini will release a lot of water. The key is to continue frying until the water is completely cooked out :)

Lemon juice degrades very quickly with heat and it basically gets rid of all the sourness. Pepper is similiar, that's why no one puts pepper before making a steak, you put the pepper on once the steak is done and plated.

Thanks for the great and simply delicious recipe. I was searching for a quick side dish for a gathering and this was perfect because I had every single ingredient. It does take quite some time for the slices to start browning though, 20 minutes but after that it's fast.
