Question for my son, he has autism and loves BOSH. We're slowly getting him transferred over vegan as both my husband and I are Vegan. With autism texture's are a big thing for them and he doesn't like Egg plant what can be used in place of it. Also he's not a zucchini unless it's raw, thank you. Keep up the awesome recipes. We made him the potato's stuffed with ragu recipe and he's already asking for that one again.

I made this yesterday. The eggplant was not cooked enough for my liking. I would deep fry it next time.

This curry doesn't have the curry essentials like cloves, star anise, cinnamon sticks, coconut cream and obviously, its not curry without any curry leaves. Curry leaves is important in curry due to it's distinctive curry smell. How is this a curry?

You sound very elitist about what a curry may or may not contain. The garam masala that they used likely contains cloves and cinnamon. Coconut cream is often not used in curries and is far from essential. Curry leaves are not an essential part of a curry despite the name and you will struggle to find them fresh in the UK anyway. The ingredients you list sound more like a Keralan curry but not all regions will use the same spices or ingredients as a base.

There are hundreds of different curry recipes and not all contain curry leaves or coconut cream.
