LOVEEEE hu tieu Nam Vang! Hu tieu is such an underrated dish!!! Also dont discard the pork lard. Pour it into a glass container and use it later in other dishes. It's so much better than veggie oil. Just discard the portion with the fried bits and pieces in it.

You can substitute it with any radish or some carrots, and for squid, dried scallops work well, or you could double up on the dried shrimp

I made it and I was initially skeptical of the stock bc it had an intense, Chinese soup flavor. Bro, my hats off to you 💜 👏once it all came together- it was 🔥💣. Very close to the Cambodian noodle soup served at Bo Ky restaurant in NYC. So I made a few modifications, I roasted the pork bones instead of parboiling. I didn’t rinse the tray bc I use the cooked noodles to soak up the oil and flavor the bones left on it- instead of rinsing with cold water. Used the sub Ingredients. Highly recommend this recipe to anyone that loves Asian noodle soup. *My method/techniques made this recipe longer but well worth it. Keep posting your awesome recipes!

Throw away the rest of the pork lard? Are you crazy. That is yummy stuff. Use it for stir frying your veges etc and it adds so much flavour to them

Great question! You can either eat it as is or remove the bones and shred the meat - I usually save this part for myself, though, as the primary function of the neck bones is to make the broth
