I vacationed in Vietnam in 2018. Was in Hoi An and was hungry and just wanted something close by my hotel. Stopped at the first food place i saw. It was an old lady only selling chicken rice. It was the most amazing thing i ever had. When she gave me the check, i think it was only a like a dollar or 2. All i had was a 500,000 dong bill. She could'nt give me change. She was going around the block asking people for change. I was trying my hardest to tell her its ok, she can just have it. She finally excepted it and was so grateful. It was an experience I'll never forget

I prefer using brisket. I like the texture and fat along with its connective tissue. 😊 I just use ginger, shallots, garlic, lemongrass, white pepper, fish sauce, tomato paste and sugar. Also, add in some star anise, cinnamon with a pinch of Chinese 5 spice. For me its perfect when you get a mild fish sauce after taste. Yummy!

agreed about the beans, they're killer and really pricey... i've made 'kinda' similar copycat beans, i added a bit of broth at the end followed by a cornstarch slurry to thicken the small amount of liquid and make it stick to the beans... (theirs seemed 'saucy' to me, but i may be misremembering) your technique of deep frying the beans however didn't occur to me and i'll try that! thanks!

Thank you for creating this channel/blog! Since moving out, it’s been difficult to cook Vietnamese dishes. Growing up, my mom always made me feel like a nuance when I was in the kitchen with her. I never got to learn how to make these dishes. So when I feel homesick, I have to turn to the internet to get these recipes. Especially now when I’ve been trying to reconnect with our culture. That's not the authentic way. That's the modern way of adobo. Marinade, fry, stew. The authentic way is more of a reverse marinade, where they mix in all the ingredients and stew until dry. Let it sit, to be eaten later. That's the reason why left over adobo are the best.

Its nice if you crush or slice the garlic..then add some chili for some kick..and add some sort of citrus to give it a sour fruity taste,preferable is calamansi though.but any citrus would do.and add some bay leaves to give it more peppery flavor aside from the peppercorns
