Looks amazing. I just use smoked bacon strip straight in the dryer. Spiced with bbq rub and maple syrup. Absolutely stunning.

Pro tip. Let the bacon sit uncovered on a rack in the fridge overnight or for up to 2 days to dry and firm up. It is way easier to slice when it’s firm.

I've wet brined it in Prague powder, salt, sugar, maple, smoke and pepper then vacuum sealed it in the fridge. As soon as its firm I'll freeze it a little, run it through the deli slicer (diagonal across the grain) and try some different seasonings. I've got 4x half tenderloins so I can have a control and 3 variations. Let me know if anyone has any ideas :)

6 days later my pork tenderloins are maple cured, sliced and dehydrated. The texture of jerky but the taste of Maple Gammon. Not dripping with fat, just lean meat and flavour!

You should get your meat about 1/2 frozen before cutting. It will be firm enough to cut nice even slices but soft enough to cut

My bacon jerky from scratch using pork tenderloin was a huge success! I'm glad I didn't cheap out and use store bought bacon. Too fatty for jerky.

I buy thin slices of bacon put it in the normal owen on a rist, turn on owen to 50"C , leave the door a little open. And let it dry for over night.. 6-7 hours... Perfect every time.. No work at all.. Same with beef... Easy..

I don't pat dry during drying. Just keep dehydrating and pat dry just at the end.
