Finally SOMEONE COOKING IT THAT IS NOT CHUCK ROAST!!! I am Texan as well and I can't stand the Chuck roast it never taste like the Mexican taco truck way. Someone from El Paso told me use beef cheek. I put that in my instapot and will NEVER GO TO A TACO TRUCK AGAIN!! THANK YOU FOR a great authentic video!!

Some people use what is available to them. I do not live near an authentic Mexican grocer so I have to improvise and use chuck roast as most regular grocers don’t carry lengua and beef cheek meat.

My Dad Used to make this in Our Pit in the back yard. Him and my brother, brother in-law, Tio would sit out in the back for Hours almost over night then early morning started all over again. Yummy yum that looks so delicious. My parents used to make it for the holidays. My Dad, Uncles Joe, Paul, Rosendo and Geronimo, and 2 grandpas, would sit outside and watch it. They had there little radio out there listening to Tejano music. They would have it ready by 7:00am and start have the brisket for ready 4:00 pm. Everybody else would bring ribs, chicken sausage, potato salad, beans a cake or 2 and Tia Lupe would bring her pecan brownies. Those were the days.

What memories you bring back to me my wonderful amiga. We'd either go to Bonanza Bakery or to a home I believe belonged to the Palacios family where they would make barbacoa in the ground. Rachel, I'm 81 yes. And you bring so many memories of my maternal grandmother making pork tamales with the aunts during xmas. Making a lot of the mexican dishes and others I never knew. My family has been in Texas for over 200 yrs.by the Gulf of Mexico or near the it. Our Mexican heritage is beautiful and you teach it. so well. I have learn so much. From you. Rachel I am hooked on you. You are best. Rachel, you need to write a cook book. I would buy one for my daughter, daugher in law,and me. You will be hearing from me in the future. My mom would get the smoked beef tongue. After it was cooked she peeled the outer skin off. It tasted like really good ham. Very tasty.

Rachel I can’t thank you enough. I made this Barbacoa because my family came to visit. I had never made it 😅I was to worried I would make a mess and waste all that meat. Well I decided to try your recipe and it was not only delicious but it was really easy to make. I made you corn tortillas and served it with some salsa Verda it was amazing and a big hit. I will surly use it again. I chose only the cheek meat because of the price of the tongue (and it grossed out my niece and my daughter). Anyway it was delicious thank you for always sharing.

My Mexican childhood girlfriend introduced me to beef younger. I love it! Although I haven’t made it for many, many years. I made the tongue like she said and I put spices in it after I remove the outer part of the tonged and chopped it up. I made salsa, and the youngest tacos for my then gringo husband. He loved then and so did I! They were very delicious. So I said, what kind of meat do you think was in the tacos I made for you tonite? He said he did not know. I said it was beef tongue! He got so mad and furious with me, I could not believe it! After, I thought about it, I laughed! Needless to say, we are no longer together, which makes me very happy! But I always remember how wonderful those tacos tasted, I just wasted them on a person who did not appreciate my wanting to have a food journey! Hahaha

My husband from Jalisco Mexico did the same thing to me asked me if I wanted beef or chicken tacos and then later at a restaurant I said you tell me in red sauce me said what do you think was in those tacos at my mom's and I was mad that we did not split up

FINALLY, a barbacoa recipe that doesn't involve all kinds of chiles and vinegar and a ton of spices like cinnamon, cloves, oregano, cumin and so on. THIS os barbacoa, not birria or menudo or pozole. Thank you, Rachel, and I'm so EXCITED to be making this barbacoa right now, and just to let you know, my whole house smells amazing, lol. I cheated with store corn tortillas 🤫 but I can't wait to eat! 😉🤗💞 Later, I'll make some flour tortillas. 😉😊 I know every pueblo makes their own versions, and that's good too, but I like the simplicity of ingredients in yours to enjoy the flavor of the meat not over taken by so many different flavors and spices.

Delicious looking Rach. I've never used tongue but I do use beef cheek and I mix in other meats to even it out. But the way you make it is the way my mom used to make it. Still good either way. Great video. Thanks for sharing.

Looks really good I will try in slow cooker I’ve never made it in that also your absolutely correct amount the bay leaf. It is a good addition to a lot of dished but too powerful for Barbacoa. My Dad would cook the cow head in a pit but had to change to cooking it in the oven. Low and slow is the way my Mom would cook it. Then she would take all the meat off the head when it was done and make burritos with the meat. Best damn barbacoa ever.
