Learn how to make beer cheese! This recipe surprised me- the flavor profile is so intense that my taste buds didn’t quite know what to think at the first taste! The sharp cheddar flavor is identified first, followed by a big hit of beer flavor. But after three or four bites, I knew I had found a winning cheese dip recipe. As a cheese maker, I’m always looking for ways to cook with the cheese I create.
I had this cheese dip put together for a St Patrick’s Day party in just about 10 minutes. Quick and easy cheese dip recipes are a huge hit - everyone will ask for this one!

That a clever recipe. The mustard has a good point as emulsify agents to keep the water in beer link with cheese. You can try to use egg yolk as well

Perfect holiday dip. Do you just find Irish cheese at any store or is it found in the specialty cheese section?

It does, and I really enjoy it.🧀🍺 You could use a lighter tasting beer. I'm not sure about cooking it down. I've never tried it 🤔 If you do, let me know how it goes!

I used spicy brown mustard, but I think a stone ground mustard or Dijon mustard would work well too!💚

Hi Sarah, Typically, Irish Cheddars are more mild and buttery than traditional English Cheddars. In the US, a very popular brand is Kerrgold. Hope that helps! Lisa

What's the point of whisking the beer?

To remove the carbonation from it for texture control. If you don't think it will affect the texture of the final cheese, by all means, leave out that step :). This cheese is delicious. I hope you enjoy! Lisa
