I just tried this recipe, exactly as you listed it and it came out great! I subbed Coconut milk for Oat milk and it worked just fine. Also I found that lightly roasting the sesame seeds before blending gives it a much richer nuttier flavor. It also emits a bit more oil into the blend, making the muffin a bit more moist. Thank you!

I finally got around to making it, and goodness me it is every bit like mochi ❤️❤️, just the right sweetness, perfectly chewy and coconutty and oh-so-yummy! I think it will also go well with some coconut jam (called kaya) slathered on it, like a frosting. Thank you once again. This is a keeper!

tried this recipe... the muffins taste so good! I made my own tahini because it is too expensive in my country to buy in a jar. a bit messy when i try to blend the sesame and the oil, and not as smooth as your tahini. but the muffin taste so good it was worth the mess. Thank you Mei and Kyong

I’ve got everything in the cupboard except the glutinous rice flour. I’ll use a gluten free flour and xanthan gum. I’ll look for that flour though. I’ve never seen it! In all my 50 years of cooking and baking.

Hi if i were to bake it with mini muffin trays any idea on the temp n time?

Hello! Honestly, we have never tried that before, but if you do use a mini muffin pan, bake at the same temperature and decrease the time to 12 minutes. If it is not cooked, then add three to five minutes increments at a time until cooked. Stick a toothpick into the center and if it comes out clean then it is cooked! Hello! Unfortunately for this recipe there are no substitutes for tahini without changing the muffin all together. But if you want, you can try to make it with almond butter. You would just have to slightly thin out the butter with some neutral oil. (Of course it won't have the nuttiness of the sesame or the flavor.)

Hey! Thats a good question, unfortunately no, because rice flour give the mochi muffin its mochi texture. If you use AP flour then you will lose the texture and it won't be a mochi muffin. Also, the amount of rice flour to ap flour would be different.

@@sylvialai6575 No, rice flour and wheat flour are not the same.. rice flour does not have gluten, and AP and wheat flours have gluten which won't work for the texture. When I try to bake this today, the mochi outer skin along the inside of the tray cup was not cooked like the ones in the video. Anyone know why?

Hmmm, the only thing that can make that happen is the oven wasn't fully to temperature. For our ovens even after it says its preheated we have an external thermometer inside to check if the oven is actually to temp. We always have to wait about 15-20 extra minutes.
