A good way to check that your jam is ready to set is to put about a teaspoon of jam onto a cold plate and let it cool and set for a minute. Once the minute's up, push your finger through the jam. If the skin of the jam wrinkles in front of your finger, it's going to set well in the jars.

Pomonas pectin is not available at stores in Ohio, so I have been buying mine in bulk directly from the distributor. I also bought the packets like you show in a display case for sale at farmers market. Based on the link you provided, I have been selling them for way too little lol! With Pomonas, you don't have to use any sugar, or can use any type of sweetener you prefer. This is great for diabetics!

I get the blueberries for $2/lb for organic. This batch took about 3 lbs of blueberries (if I recall correctly), I pay about $0.75 per jar and after calculating (rough estimates) including lemon juice, pectin, sugar, etc. It comes to about $3 per jar. Which is not significantly cheaper but it's worth it for me because I know what's in it and I can use whatever sweetener I want and the amount. Hope that helps!

There are also pectin alternatives like using different types of sugar. Some people are allergic to pectin, but they still manage to make awesome jams.

Tip from Pomona Pectin regarding using this recipe: "There is one thing we do differently from Vanessa in regard to jar filling and processing. We fill a jar, put the lid on, and set it aside until all the jars are ready. Then we add them all together to the boiling water in the canner. As soon as the water gets back to a rolling boil, set the timer for the proper processing time. The reason for this is that if the pectin is exposed to heat for too long, it will break down and won't be able to jell the jam."

That's the processing part of canning. That kills any bacteria and allows the jam to be stored at room temperature (unopened) for up to one year without needing refrigeration.

I love your video I have a question I noticed you have a glass top stove and was told I could not use a glass top stove for canning (did not know that until after I bought the stove) have you ever had any problem using your stove for canning? I miss canning so much and would love to do it again.

In order to completely seal and process the jam it must be water bathed, this eliminates bacterial growth which can be deadly if consumed. All canning is either water bathed for high acid content foods such as tomatoes salsa fruits, jams jelly's,. Or pressure cooked for low acid foods, such as meats potatoes corn veggies, anything non acidic must be pressure canned.

The time to boil the jam depends on your altitude. Make sure you check that before canning your jam.

Great video. I have 2 questions. What do I do if the top does not seal properly? Do I put it back in the water or do I use that jar first for eating? John Streeter Hi John. You can do either - put it in the refrigerator right away and eat it first or make sure the top of the jar is clean and check the top lid (or even use a different one just in case it isn't quite perfect) and boil it again. I don't think anyone would need more than the max she mentioned which was I think 2 cups of sugar unless you have really bitter berries. A lot more sugar MIGHT affect the ph and you want anything you can in a water bath instead of a pressure canner to be acidic enough to be safe.

One thing I noticed was you shook the jars of jam as you removed them from the water. Be careful if you do this as the lids on some of the jars may not yet be sealed. And, if they aren't... some of the jam mixture can slop up and cover the rim of the jar allowing you to NOT get a perfect seal.

One tip the extract the juice from the lemon is to beat/tap on the counter until all the pulps have exploded inside then squeeze them. Some people will heat the lemon for like 1 to 5 seconds after beating the lemon. Watch out for the kids they might be really hot. Which is why I only use the beating technique I don't know it you knew that but another variation we Haitians do is to add vanilla extract in it. But gentle with it like 1 to 5 tiny drops. You might wanna try it before in a cup for yourself before doing a big quantity. The rest of the lemons skin and pulp I use it to wash my meat. That is if I cook it meat right away if not it goes to my compost bin.
