Thanks for teaching such an easy method. I was deterred making cakesicles watching other videos. Cover the mould with chocolate, refrigerate, press the crumbled cake into the mould, another layer of chocolate.... So time consuming. This is really easy

The chocolate we used here was Dr Oetker Fine Cooks White Chocolate however any chocolate should work. If you're melting the chocolate in a microwave, start with approx 40 seconds, stir well, then if there are still lumps of unmelted chocolate, put it back in the microwave in 10 second bursts so you don't overheat/burn the chocolate. The residual heat of the melted chocolate should melt any small lumps if you keep stirring.

Do you just lay them flat on a plate for the white chocolate to set on them in the fridge? Also does the chocolate not bubble or go lumpy when set? Thanks for the video

I would lay them on some baking paper/greaseproof paper once dipped (and you've removed most of the excess chocolate). They should lift off easily when they've set. If you put them directly on to a plate, they could stick to the plate and then it's difficult to pick them up. (As I learned when I forgot the baking paper once!) You might get a couple of tiny air bubbles but they shouldn't really be lumpy or bubble. Hope that helps. :)

Hi, they will be fine in a container/tupperware in a cool place, or you can keep them in the fridge. Just bring them out before you serve them so they’re back to room temperature. Hope that helps. 🙂

As long as the cream cheese would firm up enough when mixed with the cake, to hold the cakesicle shape, it may be ok. You would need to keep the cakesicles in the fridge after they were made if you used cream cheese. :)

Hi, Colourmill is perfect for colouring the chocolate as it's oil based. Use a couple of drops of the Colour Mill to colour your melted chocolate first, before dipping.

I tried the cake recipe, but the batch did not come out smooth.. How long did you mix butter+sugar, and also when adding the flour? also, I use 320F (160C) for 20min and it was still liquidy

Thanks for your comment and sorry to hear the cake didn't work too well for you. Ovens can vary, so that could affect the timing so don't be afraid to leave the cake in the oven longer if it doesn't seem baked after the 20 mins. The best tip is to use a skewer/knife to test if the cake is done. When the cake is done, the skewer/knife will come out clean. Beat the butter and sugar until you can see a change in colour. The mix goes pale and creamy. This can take a few minutes. You don't want to over mix when you add the flour, just until it's all combined. Hope that helps!

This was unsalted butter, however it's personal preference. I've heard some people prefer salted butter to cut through the sweetness of the buttercream but I haven't tried that.

Hi Jessica, I haven't tried, however you should be able to freeze the completed cakesicle. I would defrost them in the fridge overnight. If they have sprinkles on, the colour from the sprinkles may run from the moisture so that's just something to think about.

You probably need about 400g of melted chocolate in total so you have enough to dip and cover each cake fully. In the video, I used approx half the cake mix with 200g of melted chocolate. I did have chocolate left over but it would have been difficult to completely dip a cakesicle in the remaining chocolate (although a taller, narrower bowl/glass may have helped with that).

Hi Zoya, sorry to hear you're having problems. You could try dipping the stick in some melted chocolate before pushing it into the cake, so when it sets, it's stuck to some cake. You could also try the alternative method from this video kzbin.info/www/bejne/sJasZK2paLWtgck. It avoids dipping the cake into the chocolate so you might get on with that technique better.
