Candied lemon peel and orange peel is mostly used in Christmas baking like fruit cake or the German Stollen. If you can't get candied fruits, here is how to make them from scratch at home.

3 Lemons (with a thick skin if available)
1 cup water
1 cup sugar

I've done this a couple of times now and my candied lemon and orange peels have turned out great. Only difference is I throw mine in my dehydrator at the end. The way you remove the pith is also a great tip. Sulfite allergies don't allow me to buy this kind of ingredient but with your help I've made some great lemon and orange scones. Thanks for sharing!

@@paulasaez9247It's been a while but the recipe note I made says 135F for 12-24 hours. My reference material says reduce the temp to 120F after two hours until done.

I am in U.K. Loved this and your presentation. So much of our classic Christmas - like goodies made with candied peel, Silent Night and Christmas trees - comes from German traditions, many popularised by Queen Victoria’s husband, Prince Albert in the 1840s and 50s. Now we get new German traditions - from Aldi! Hahahaha.

Great! I am releasing the Stollen video on Saturday (if everything with the footage is good) and that's why I made this video in preparation. I hope my Stollen is the same as your grandmother's since it's also the Dresden Stollen - but sometimes family have their own secret recipe.

@@MyGermanRecipes thank you. I do cheat with Trader Joe’s or Home-goods, they always import European Holiday Foods. She would start baking in early October, I remember all the German grocers would set up all the spices in one big display. She also made Lebluchen, but I can’t find the Potash, it’s available on Amazon but I always forget to order it. It’s not available in drug stores here. Look forward to the stollen recipe on Saturday. This is great! My mother used to make candied grapefruit peel, but I had no recipe. Your process is so clear and just wonderful! The tip about freezing is extra useful..I am so glad I have found your posts! I have learned so much, and you (and. your daughter) are a delight! Many thanks!!

Lovely presentation. Haven't done this yet but I know what video I need to look at when the time comes ❤️ Additional Tips and Ideas: (1) As a no waste home, you can collect all the pith-water from the 3-4 boils in a larger pot and wait for that to cool. Once cooled, there should still be nutrients in the water that would help the growth of plants that enjoy lots of watering on a regular basis. (2) Resting the peels for a day sounds like great advice; however, if you're worried about little critters during that time for whatever reasons, invest in a small mesh Food Tent to cover them up. This is exactly how I've been making my candied lemon and orange peel (Zitronat und Orangeat) for years. Love it! I actually add a bit of cinnamon when I add the sugar. And when I dry it, I put it on parchment paper and usually in a low oven for several hours. I have to make some more Zitronat this year - that one always seems to disappear quickest in our home. ;-) Thank you for a wonderful channel!

@@kleineroteHex - It's not bitter at all, in my opinion. 3 washings is sufficient, whether lemon or orange peel is used. Then it is cooked in plenty of sugar. The lemon does have just a bit of a "bite" to it, but this is the lemon flavor. I do not find it at all bitter. You will enjoy it!!

Makes several things. Initial boil had lots of Essential oils for teas. Sugar water looks to be a simple syrup. Love it.

Wonderful! I a dozen lemons, limes, and oranges at a time and hate to throw away all that flavor. I will definitely try this. I made Orange/lemon marmalade for the first time and it was so easy!!!

So easy I'm making more this week. I've done orange and tangerine but need some lemon. Its become very difficult to impossible to buy mixed peel with the pandemic and this is so much easier than the method I had been using. I tend to nibble at the bits to often before I bake with them as they, especially the tangerine taste wonderful. 🍊 Thanks for this easy method. Mine goes back to before my Ouma was married and that's a long time ago 😃❤️ p.s. I love your Channel.

If you want to make candied lemon/orange peels, the easiest way (forget all the fancy procedures) first is to soak the fruit for 10 minutes in warm water ( I don't mind a little bitterness) then dry it and cut it in half at the Equator, then juice it. Next, cut halves into halves again and remove the inner lining. Next, cut the quarters into pieces on a cutting board and mince them with a big kitchen knife to your choice. Then weigh the peels and mix them with an equal amount of sugar. Let it stand for 30 minutes so the sugar can draw moisture out of the peels, then place everything in a frying pan and let it heat at level 7, stirring intermittently till all the moisture has evaporated, i.e. no more steam is noticeable. If you want to add a little brown color, keep the heat longer. When the batch has cooled down, the clusters can easily be broken up. Lastly, place the candied fruit in a sealed jar. It will keep at room temperature for centuries - but not in our house!

Both my Grandparents were from Germany. And grandmothers cooked lots of German food. Now I'm old and miss their food so much. My aunt always made Christmas bread with candied fruit in it. I make it now with store bought candied fruit. I will now make it myself thanks to your video. I enjoy all your videos.

Thank you so much ❤️ I use lemons a lot with banana ginger and honey with water to make a healthy drink instead of soft drinks and I always wondered how I could use the lemon skins. Can you just eat them as a candy sweet or are they only good for baking.

I peel with vegetable peeler so I didn’t get the pith. I roll in sugar after few hrs while tacky. Nice recipe.

So soothing! Beautiful recipe! Would it still work if I candy the peels just halved? I think it might be easier to line to dry on the cooling rack and then cutting it🤔

@@MyGermanRecipes I soak the uncooked peel for three days in cold water. Replacing the water every day. Sometimes I run out of time and do that for a couple more days till I have time. At this time I remove some of the white flesh if I want less bitterness. (Boiling for about half an hour before that makes it easier to remove the white flesh once cooled in the water, often leave it overnight.) I cut the peel into slices and make a syrup with 2 cups sugar to 1 cup water slowly let it dissolve over a low heat. Add the peel and then simmer till peel is translucent. Then basically do what you do from there. I really just make it fit into my spare time. I've adapted it from my Ouma's recipe 😊

I did orange peel, coated with sugar crystals when drying a couple months ago. Was wondering how long they’ll store for? Do you think that it’d be ok to put sugar coated fruit in fruitcake?

I use them in Stollen and Gingerbread (or just eat them as they are) and I would totally use them in fruit cake. I noticed that they get a little softer if you put them in an airtight jar for some days and that's also how I store them. If they are dried well and stored correctly, they should be good for several weeks. After that, I would simply put them into the freezer until I want to use them again.

That realy depends on how juicy the peels are. Just check them every now and then and taste if they have the right consistency for your taste.

It depends on your personal taste. When I was younger, I would bot have liked it since it still has a slight bitterness but getting older,I like it. However, while I now sometimes eat some as a snack and others enjoy them dipped in chocolate, they are usually meant for baking like fruit cake or the German Stollen bread.

Nutrition wise I am not sure but it should have a good amount of vitamin C. Some eat it as a snack but in Germany, we use it for Christmas baking in cakes, stollen and our "Lebkuchen" (kind of gingerbread).
