Peruano beans (aka Peruvian, mayocoba, canary) are my go-to beans. They are much creamier and take less time to cook than pintos. I'm going to try your special spice recipe on my next batch. Thanks!

You guys always cook the best looking foods, I live in New Mexico and I'm used to eating flavorful foods that's spicy like that. Here in New Mexico we have a combination of recipes, New Mexican cuisine, which is a blend of Spanish, Mexican and native American dishes. Some of the dishes also come from Northern Africa due to the fact that the Moors were in Spain for hundreds of years.

@VillaCocina in Mexico, we call Mexican fried rice Sopa. Some people, thanks, I'm talking about sopapea, which is soup, no, that's not what I'm talking about.

@VillaCocina here in the Midwest, we call mexican fried rice "sopa". My grandmother made it for me all the time she knew I was coming over her house. And if our restaurant's knows what I mean when I say sopa, so should you. Mexican fried rice please.
