I just discovered your channel today and have spent all day looking at your videos. My husband is Mexican and I want to make him authentic Mexican meals as well as share the culture with our children who have never been to Mexico. I'm from the south where there is NO authentic Mexican food and his mother is not well enough to show me. Your videos are a God-send. Plus I like things SPICY! Even more so than my hubbie lol. Keep it up! I love how you tell about the culture while you cook. It's not only informative but fun to watch you cook! Thank you for being very detailed and including both spicy and mild versions. A great way to de-seed things is with an apple corer. When I'm making jalapeno poppers I cut the stem side so there is still a little green wall. Then I use the serrated edge by cutting down at stem wall (keeping it intact) and then across. I'm looking forward to trying these salsa... the spicy one first!

Your directions are clear and easy to follow, and the ingredients are simple and usually very easy to find. Your channel has really inspired me to ditch the restaurant scene and start making all of my own fresh, wholesome Mexican food at home. I have made that creamy green salsa a few times now in the past week. it is so addictive! Odd note, I discovered that this sauce pairs extremely well with fake crab. We made some seafood enchiladas with it. What a wonderful salsa, thank you and extremely happy I found your channel.

Love the salsas - I make salsa all the time, but it's nice to see someone else's take for variations I may not have tried yet. FYI, when mentioning use of Kosher salt, it's best to say what brand you're using. Morton Kosher salt is nearly twice as salty tasting as Diamond brand. Technically, it has to do with the way they're made, the crystal density and shape. At least you're telling people 'to personal taste', but it may surprise some if they are using half or twice what you use. Thanks again - looking forward to your next yummy recipe!

Of course, for those without a quality blender may not have the same experience when looking for that final smoothness of the contents. I not found a comparable blender to the VitaMix. They are simply superb and well worth their investment in any kitchen as they are built to last for decades. As always...another homemade recipe that fills not one but a few uses.

I do meal prep only for myself and I love fresh salsas. What's the best way to store them? How long do they keep in the fridge? Do any of them freeze well?

From personal experience, I'd say about a week in the fridge but it never lasts that long before it gets gobbled up. In the freezer these should last quite a while if you've got a vacuum sealer.

You may have to blend for a longer period of time depending on the blender you use. I used a vitamix blender.

6:24 Actually, the additional heat that is not already contained in the fresh pepper flesh itself is contained in the Placenta of the pepper, which is what the seeds adhere to inside. Some people call them the "ribs" of the pepper.
