One of the problems that I've had is that the tortilla falls apart when I put it in the sauce. I can make my own corn tortillas but apart from tortilleria tortillas, which store bought do you recommend, if any, that won't fall apart? Thank you in advance.

I totally get it. When making enchiladas, homemade or from the tortilleria work best. Pre-packaged store bought ones tend break apart easily. I try to avoid using them but if I ever have to: I make sure they are stale, and cold before dipping into the sauce. Once added to the oil, don't let it soften too much before flipping. While somewhat firm, flip. As soon as it softens and is hot. Carefully remove, fill, and roll. Its worked in the past. But, I try to stick with homemade or buy them at my local tortilleria.

I learn so much from your videos. I am vegan and I adapt them best I can. Trader Joe's has soyrizo that I buy frequently so anything with chorizo I can do fairly well. I didn't know about smashing the potatoes into the chorizo - Rick Bayless didn't show me that. Your knowledge of traditional, authentic Mexican cuisine is deeper. Nelson reminds me of a really good friend I knew some 40 years ago, it's like he's his clone. We were both cooks at Harvey's in South Lake Tahoe. He was a really good person.

Funny you should mention Harvey's in South Lake Tahoe, as I drove by a few weeks ago and the whole few miles of business/Casinos look very different now. My favorite place to go year round is Sand Harbor, grew up going with my family, for the past 50 odd years. I'm an old timer such as yourself 🤣

I've had many Speedy Gonzales' in my time. The dish is called that because it is the quickest to prepare. At lunch time it can be at your table in like 5 minutes. Sometimes i will go to a different Mexican restaurant and not even look at the menu. "Speedy Gonzalez with rice, order of beans with extra sour cream" My order comes right away every time. Love it.

Straining makes such a huge difference with the sauce. I used to skip that, but once I tried straining it I realized how much better it is. Fun fact, for reasons known only to Mexican grocery marketing people at least fifty years ago, dried ancho chiles and fresh poblanos are often labeled as "pasilla" in California.

If I could find some quality chorizo I'd love to make this. The chorizo available to me is greasy and doesn't crumble like yours did. And this meal looks so delicious I have to try it! I lightly spray my tacos with oil on each side and bake them in the oven at 400° for about 8-9 minutes each side. Crispy and lighter.

Avocado oil has a higher heat index. Olive oil turns oxidant when heated.

I use the kind that's good for pan frying and sautéing. But yes, avocado oil works great as well. I actually used it to fry the tacos.

Includes the chili seeds - gonna be spicy - remove before toasting if you want less punch - less chilis if you're cautious - keep trying until you find the spicy level you enjoy.

There's very little heat in Guajillos (dried Mirasol) or Anchos (dried Poblano). And the heat of chiles is mainly in the pith and ribs, not the seeds.

Didn’t work well. When I put the sauce soaked tortilla in the oil it splattered all over my kitchen and most of the enchiladas fell apart as I tried to roll them. What looked easily doable for you was a disaster for me.
