That's right. Totally agree. It's the life story of so many of those ridiculous online videos - claiming to 'teach' people how to make the hong-kong variety of fluffy steamed buns, but never follow through with it. The title says 'how to make char siu bao'. So, what's going on at 0:21 ? Is it like adding sugar to the dough, and then manually mixing it into the dough? This might be a nice secret technique revealed.
