Yep, I know what you mean... but in this case, it causes an easy recipe to have too many steps. Start with 4 cups of water, 1 cup of grits, 1 stick of butter, and 2 tablespoons of salt. Bring to a boil. Immediately turn the heat to low and let it cook for 30 minutes on low, stirring it every 3 or 4 minutes. That's it. No need to keep adding water and butter, you just start with the right amount from the start. LOL Btw -- I usually do 3 cups of water & 1 cup of milk. Makes them even creamier.🤩

I'm an American Indian, and grits originated with our cultures. The colonists learned to make it from the Muskogee, but it was and still is common to pretty much all of the corn growing tribes. I grew up with grits, and I have to say, this lady knows how to do grits right! Miss Mattie, you just earned yourself a subscription! I like to add a bit of cheese and andouille sausage to mine. I slice the andouille into coin shaped pieces and boil them with the grits before I even put it on the heat, so they get all cooked at the same time and the grits absorb the flavor. When I'm not feeling lazy, I'll also add some shrimp in with the andouille, and then top the grits some red eye gravy.

I use milk in mine too started about 6 months ago when a friend cooked grits they were so creamy I made them for my family and they loved them, all I want is butter, salt and pepper. They can add whatever they want in there's.

I just follow the directions on the box, but stir a lot more and cook more until creamy but not spread when put on plate. You gotta stir your grits. The way she is doing is how we cooked regular not so much instant or quick grits. I love to make a pot up enough to fill a loaf pan, and then pour in the pan and put in refrigerator to set up to later in the day or next day. Take out, turn out on parchment or wax or a plate, slice medium thickness and warm/brown in browned butter or if you have it, strained bacon fat. Oh my gosh, put slow cooked pot roast (with the onions, celery, carrots) over a couple of slices. So good. If you want, you can wrap the loaf up and just slice off what you want for a couple days instead of browning at one time. Also you can, after the grits are nice and creamy, but still very hot, grate and add in your favorite cheese - Mexican blend, or a Swiss type or other melty cheese or a high quality cheddar. Think the cheeses you like in Mac and cheese. You can serve like that or I prefer to put in the loaf pan to set up and brown the same as noted above. It’s good under chili, or just as a side on the plate with roast chicken, steak, bbq, etc. Quaker grits, I think, have always been more gritty...Jim Dandy is much creamier. I think it’s because of the way they mill. Restaurants today don’t know how to make grits - she is right for sure there. Look for old fashion grits and if you can find them fresh milled they are more flavorful. Look for a local mill that stone grinds - you will smell the corn fragrance. Fresh ground is much better for cornbread too.

I’m a 60 year gal and I’ve never cooked real grits before. I tried the instant ones in a single Serv pack with “butter flavor”. Gawd awful. a few days ago my neighbor gave me some grits that he saw ground at a grist Mill in New England and I had to try your recipe. Not bad for my first attempt but now I know what I’ve done wrong and I won’t do it next time. I guess lots of water (and patience) truly is the key. I also put a little bit of maple syrup that a friend of mine made on top. Thank you so much Miss Mattie. I’m a vegetarian and not a great cook So I think I will subscribe.

Hi Mattie! I'm from Pennsylvania and as a child I was always taught to only follow the directions on boxes. As an adult my family now comes to my home every Sunday for suppers, & also holidays. They love my food but always ask for MY recipes! I have them watch me as I don't use measuring cups... I've found that adding my dashes and pinches of love to my food is so much better than always following the boxes. So if they want the recipe they spend time with me, so they can watch the magic happen❤️ thankful to see your video because I love grits and love seeing you make them with lots of love n Butter❤️

Thank you for this great recipe! As a kid, butter was expensive. So, my grandmother used bacon grease in her grits. She also soaked her grits overnight in water.

I love grits. One of my favorite dishes is little rich meatballs served over cheesy grits and topped with a brown demiglaze. Oh my GOODNESS!! So delicious!

There’s a very similar Romanian food called mămăligă which is made with yellow cornmeal. Very good with stew and sour cream! Thank you for your video!
