How to Make Cheese Seftons - The Victorian Way

Today Mrs Crocombe shows us how to make cheese seftons - delightful savoury treats designed for the end of a meal, for the dessert course, or even sometimes after it as an alternative option for those who prefer a savoury palate cleanser.

INGREDIENTS
200g Cheshire cheese (grated)
2 handfuls of flour
A pinch of cayenne pepper
50g butter
For the puff pastry:
500g flour
100g butter
Water
METHOD
Begin by making a fairly stiff dough using water, flour and a pinch of salt.
Roll the dough on a cool surface into a rectangle, and divide it into thirds by marking it lightly with your fingers. Take slices of chilled butter, work them briefly between your fingers, and lay them in the middle third. The butter doesn't have to completely cover the pastry, but try not to leave any big gaps.
Brush away any extra flour to help the pastry stick. Book fold over the sides - first one, then the other - then give it a good roll with a rolling pin. Turn 90 degrees, roll again to form a rectangle, and repeat the process. Put in two more layers of butter - three if you'd like to - and then give it another book fold and roll without any additional butter. Leave to chill.
For the cheese mix, add the butter and a pinch of cayenne pepper to the Cheshire cheese and mix well.
Divide the pastry into thirds once more, and put the cheese mix in the middle before folding, rolling and turning as before. The key is to have lots of layers, with at least seven or eight turns. Once done, leave to chill.
Cut out desired shapes using cutters and place them on a well-buttered baking tray. Put in a very hot oven (approx. 220 degrees) for 10 - 15 mins. Keep an eye on them - they’re best when hot, but try not to let them burn and become too dark in colour.

Thanks for watching! See below for answers to some FAQs about this episode: WHAT ARE SAVOURIES? Savouries were a late Victorian innovation, eaten either with or after dessert. Cheese was sometimes eaten at dinner, in which case these came with cheese, but these were also used as a sort of cheese course alternative. They were strongly flavoured tiny snacks, often including cheese, anchovies, or other umami-rich ingredients. Other examples include anchovy toast, cheese bouchées, and devilled biscuits. They were intended as a palate cleanser, especially for those who did not have a sweet tooth. WHY DOES MRS CROCOMBE HAVE THOSE SPECIAL SLEEVES ON? They are sleeve protectors to stop her having to wash her gown. Servants rarely had more than one working gown (plus one for Sunday best). CAN I USE ANOTHER CHEESE? CAN I BUY PUFF PASTRY? If you plan to make these at home, you can use any crumbly, fairly sharp cheese, such as Wenslydale or Cheddar. A hard goat's cheese would also work. You can buy ready-made puff pastry - but do make sure that it is all butter, and not based on hydrogenated fats, for it won't taste anywhere near as good, and this recipe is very simple, so the flavour will come through. WHAT IS SHE DOING WITH THAT BUTTER? WE DON'T MAKE IT LIKE THAT TODAY! There are many techniques for making puff pastry. Today, you will often find reference to putting a whole block in a basic flour and water paste, and bashing it down. This is an earlier technique and works very well. SO MRS CROCOMBE HAS HER OWN PASTRY ROOM? Yes, she does! (Or, rather, Audley End House does). Large houses often had a separate pastry room, with marble slabs for working on as well as cupboards and drawers for storage. It provided a cool space away from the heat of the main kitchen where pastry could be made (as pastry really does not love heat!), and it also ensured that small, often valuable items were not lost. The pastry room was often used for confectionery (i.e. what we now call desserts), and logically enough was therefore sometimes called the confectionery. Very big houses would often have both a confectionery AND a pastry room. There’s also the still room, which was where the housekeeper made jams and preserves and (in the Tudor and Stuart eras) distilled alcohol and perfume. And the kitchen itself has a range of larders (dry, wet, game), the scullery (washing up, dirty prep work), a coal store and the cook's room, which you can see in some of the videos. But to see it all, we thoroughly recommend a visit to Audley End House :)

Can you show us how the Victorians made gelatin from scratch? Very curious on how they did this. Seems everything looked so tedious, and time consuming but at the end its worth all the hard work and time put in it and appreciate it better! We should be more grateful for what we have and we don’t work not near as hard as our ancestors have, and for that give thanks to them and praise for every hard working people of the past!!!

It's actually very clever. Rolling up the sleeve causes damage and wrinkles when done too often. Their clothing was very expensive and valuable, so it is vital that they take good care of their sleeves.

I've seen bank cashiers and other employees who count money or go through a lot of paperwork wearing these sleeves over their shirts, because the cuffs can get really dirty and over washing or bleaching destroys them.

Thank you Mrs. Crocombe for bringing me back a little part of my Mamma who is gone with the lord this 15 years now. She would make these and they were my favourite treat. She would add fennel seeds to some and some with cheese. Both were amazing and you have brought a smile to my heart and a tear to my eye. I am so thankful to you. Hugs from Halifax

The ovens would be so warm, not to mention the heat from the stoves as well, and making pastry, especially puff pastry, you have to keep your dough as cool as possible. It would be worth the loss of space in a house that probably made pastries daily for those upstairs! ^_^

I live only a short walk away from this fine house, and it is always such a joy to visit with the family. It is particularly beautiful in the early morning when you're driving past - the sun coming up over the roof is spectacular. We've had many fine days out here, and hopefully many more to come!

@@SharpAssKnittingNeedles The lowest tear of the peerage. We, when we say Mr., and Mrs. are basicaly putting our selves two or three tears lower. A baron would be My Lord or Lady. If you can hear the patronization of the expression, my good man, that is because it is the correct address for a yeoman, a land owning or large leasing holding farmer, the tear below, Mr and Mrs.

I love, love, love Avis Crocombe recipes and the brilliant Kathy Hipperson who brings Mrs. Crocombe and cooking of this time to life. I have made several of Mrs. Crocomb's recipes and all of the ones I have made are delicious. It is amazing that chef's of this time had the skill to regulate ovens to keep a consistent temperature when baking. English Heritage: please keep posting more Victorian Way cookery videos. 😍👍🥣💖

Yes, she makes it look so easy. Whenever I look at a puff pastry recipe, I always think - that sounds way to complicate and end up cheating (buying it!).

Former baker here - grocery stores usually carry frozen squares of puff pastry and tbh most places just use that, ain’t nobody got time for all that folding 😂 if you do make it tho, the French way involves letting the dough rest in a cool place between folding steps, and at least 4 foldings altogether. Also you absolutely must cut it with a very sharp knife if you want those pretty layers to show! ❤️
