Mrs Crocombe Receives a “Taste of America" Food Parcel - The Victorian Way & Townsends Collaboration

Mrs Crocombe has received a parcel from Mr Townsend, including the ingredients and recipe for making Indian Pudding.

INGREDIENTS
A quart of milk
1 1/3 cups cornmeal
4 eggs
6 ounces of dried blueberries
3 ounces of butter
Spice
Sugar
METHOD
Gently heat the milk and add the cornmeal while stirring continuously. Stir until the mixture begins to thicken.
Let stand until cool enough to add the eggs and butter. Add spices to taste. I recommend a bit of ginger and cinnamon - and don't forget the nutmeg.
Add sugar to taste.
Add blueberries.
Pour into a well greased bowl or mould.
Bake in a middling quick oven for about an hour. Serve warm or cold with a pudding sauce or maple syrup. (We recommend setting your oven to 160° Celsius | 320° Fahrenheit | Gas Mark 3 - but make sure you keep an eye on it).

Those are snacks, and not very good ones. We have plenty of dessert (pudding) recipes that would rival even Great Britain. Try baking a black raspberry pie, or a apple using North American spy apples, properly made sugar cookies, or blueberry cobblers, and you'll find that there is a lot more to our cuisine than processed junk food.

Erm the Victorian Era was definitely not in the 18th century(the 1700s), as it didnt start until the 1840's and lasted until the start of the 20th century(aka 1900s), as that was the start of the Edwardian Era

Ah, my first full-time summer job! Picking blueberries at least 8 hours a day when I was 9 years old. Our neighbors had - not sure, really - 20 or 25 acres of blueberry bushes. Some of the acreage was “you-pick-‘em” for the public, some was picked & packaged by employees for sale. I was ‘promoted’ to the sorting shed the summer I was 10. Honestly, though, I preferred picking. Hours sitting on a bar stool in a hot metal shed picking through berries on a conveyor belt was uncomfortable & stultifying. And disorienting in the beginning! The first time they stopped the belt after we’d been sorting for a couple of hours, my brain kept going and I fell off my stool! Fyi, I grew up on the west coast of Michigan. Big blueberry industry there. (Confession/side effect? 🤫 I don’t like blueberries.)

That's actually an interesting thing to keep in mind when following very old recipes! The chickens we have now actually lay much larger eggs than the breeds they would have had in the 18th century- so if you use all the eggs the recipe wants you to, it often ends ups being too much.

Maize is very nourishing, for people as well as for livestock. And the climate of America isn't always suitable for growing wheat, rye, or barley, so we make do with maize. But maple syrup is a great delicacy! I hope you enjoy it as much as we do!

"Corn" is a generic name for "grain". The main grain one consumes depends on their part of the world. I am no expert however I do believe Barley is the corn for some, rye for others, rice for still others, oats and other grains. Maize is the grain for the Americas. All have the same amount of nutrition - grains are carbohydrates - long strands of molecules of starch while sugars are shorter chains. The hulls are the fibrous part of the grain or "corn". USA calls maize "corn".

@KP You're so right about that! The fiber is the main component of the grain of white rice, which is nutritionally void after its hull has been removed. Interesting is that without the PEEL, we lose ALL vitamins of common produce such as potatoes and apples - 2 of many which are customarily consumed without peel. White flour has lost the germ of the wheat and must be fortified as well. All good to know!

Indian Pudding is still served all over New England and it is considered a local dish just like Boston Baked Beans with brown bread or squash puree but I guess in the 1800's it was a novelty in the UK.

He would be very impressed. Audley End was originally a multi courtyard palace built for James I . After the Glorious Revolution it was returned to the Earls of Suffolk, who hired Sir John Vanbrugh to tear down the wings built for Charles II's courtiers and mistresses and make it into a family country house. The Baybrooks hired Robert Adam to redecorate and the 3rd Baron acquired a substantial art collection to go in it.
