Chicharrones de Pollo are perfectly crisp golden chunks of chicken that are a great addition to any meal - rice and beans, mofongo, tostones, you name it! The secret is starting with bone-in, skin-on chicken, that is then lightly dredged and fried until irresistibly crispy. You will not be able to resist the crunch!! Ingredients:
4-5 lbs bone-in, skin-on chicken
Marinade:
8 cloves garlic
2 tbs olive oil
1.5 tbs lime juice
1 tsp fresh oregano
1 tbs adobo
Dredge:
3 cups all-purpose flour
½ cup corn starch
1 tbs salt
1 tbs granulated garlic
2 tsp sazon (2 packets)

So true! I wouldn't be lying if I told you that buying a bunch of chicken skins from your local butcher and deep frying them in a little batter is one of the tastiest things you can do! 🤣🤣👍

You are welcome!! You are correct that pork chicharrones are usually fried pork skin (although we also call chicharrones to fried pork pieces too 😣) but yes, this is the chicken version one!! It’s super yummy!!

Eating test batch now. Marinated overnight. Didnt have fresh oregano used a couple of dashes of dried. Used 4 lbs chicken quarters. The thighs were cut into 5 to 6 pieces and the drum into three pieces. Processor didnt process well so i used my pestle and motor. Needs just a dash more of salt. Contemplating running to the store for plantains so i can make tostones. Great recipe!

If you first fry it for half the time pull it out put your next batch in then put your original batch back in you will have twice the crunch in the crunch will not get soggy even hours later just keep that process up to get all your chicken done much better much crunchier

Love this but my husband doesn’t like fried foods in oil. Will this work in an air fryer? He does the cooking since my stroke.

I haven't tried this in the air fryer, but I think it should work. The only thing is that you might need to add a little more liquid to the batter.

This is a great recipe. Here's a question for you. Often in Asian (Korean & Japanese) cooking we fry the chicken first at a lower heat, and then up the temperature of the oil higher to do a second fry. Would doing a double-frying process change the crunchiness of the pollo skin? Please advise.

We have actually done air frying with the pork ones and have a video on that. These ones since they are coated I don’t feel they turn out as well in the air fryer but certainly works.

You're deep frying dude. So long as the oil is hot enough you'll be good.

That’s Mayo ketchup the quintessential Puerto Rican dipping sauce. Ingredients are: 1/2 cup mayonaise 2 tbs ketchup 2 cloves garlic, minced 1/4 tsp adobo

Eso es pollo frito no chicharrones de pollo, Para el chicharon de pollo solo se usa el pellejo del pollo,

David - el chicharrón también se le conoce a la piel como tu dices pero a esto también se le conoce como chicharrones de pollo. No se que decir 🤷🏻‍♀️🤷🏽‍♂️

Completamente entiendo qué hay diferencia pero como usted dice - nosotros no somos los únicos que le llamamos chicharrones a esto. La diferencia entre pollo frito y chicharrones es q el chicharrón son masas de pollo - no partes completas del pollo pero tienes razón que al cuerito también se le dice chicharrón
