This is the way my Mother always made chicken and dumplings and it was one of my favorites...THEN I came home from college one time and was ready for chicken and dumplings which Mom had all ready cooked. About have way into my big bowl Mom asked "How does it taste?" I said "Great just like always."...Well, She made one change...She used flour tortillas for dumplings. I've done the same thing and it works for me...Try it once. I think you will love it.

In case you aren't sure how long to cook the dumplings, my mother always told me to cook them 10 minutes with the lid off and then an additional 10 minutes with the lid on. When you remove the lid it may look like one big dumpling. Just break them apart gently with a large spoon and stir them into the stew. If you dropped them into the broth, individually, as shown, they will break apart easily. Chicken and dumplings are a hobby of mine. And a family favorite since I was a child. (I always wanted to make them just like my Aunt Olive did.) I'm looking forward to making this one outdoors next time we go to the cabin.
@BackwoodsGourmetChannel
@BackwoodsGourmetChannel 5 жыл бұрын
I'm finding that there are a lot of variations of this recipe and everyone has their own favorite. This one is mine and our dumplings do not break up. They just break down a little and help thicken the gravy. YUM. Thanks for watching and definitely try this outdoors.

Thanks for what looks like a great recipe! I can't wait to try it! I have a question - what if I wanted to do this with coals? Is this more of a stovetop method (meaning all the coals under and none on top)? Thanks again for the post!!
@BackwoodsGourmetChannel
@BackwoodsGourmetChannel 5 жыл бұрын
Works just as well on coals. You will have to restock s few times for the long cook time and increase your bottom heat at the end to thicken it up. Thanks for watching,
@shufflerp3868

I always make my chicken and dumplings from scratch. I use some of my broth to make my dumplings so that the flavor is all through the dumplings. I do not use plain water. Also right at the very end add a little milk to whiten the broth and if you need to thicken it... corn starch

At 14:09 mark, you're absolutely correct.. it is a soup / stew.. cause once you add onions , carrots , celery and any other vegetable it is no longer chicken and dumplins. And you know no kind of thickenin in there such as milk or butter..

Objection! Southern dumplin's are dropped from a spoon, and are heavy little lumps of dough. This thin "noodle" style of dumplin' is more northern. Also, the gravy will be far better if you mix 1 cup of milk with about 1/4 cup of flour. Whisk until smooth, and at the last minute, add while stirring the broth. It'll make the gravy thicker, and creamy.

OVER RULED! I have lived in the South my whole life and have eaten chicken and dumplings in just about every southern state and have never eaten them made like you described. Even Cracker Barrel makes them like this. Your way must be a regional thing. Thanks for watching and modify this to your likings.

His way of making the dumplings by spoon drop is the way everyone in my family makes them, Florida. It's much faster and easier that way. Takes too much time and energy to roll them out. You might as well use store bought egg noodles. I would say that's the way a commercial kitchen would make them. Your way is the way people who can afford pastry cutters and pretty square bowls make them.

Our channel is the Backwoods Gourmet, so we have to be a little fancier. It is what sets us apart from the thousands of other outdoor cooking channels. This is my grandmother's recipe and she was 4th generation Floridian, so I don't take the credit. The gravy is way more important than how you make the dumplings.

Oil does not add flavor, animal fat adds a ton of flavor. I save chicken fat from roasts, if I don't make flavorful gravy that is:) Butter, milk and animal fats enhance meat flavors. Use as much animal fat as you like, add as much oil as you like, same with milk and see what you think. It's the oils that are causing heart attacks that spiked early 1900's after it hit the market mid to late 1800's.
