AS someone who makes his own stocks and bouillon I was usually disappointed with most online recipes as all they did was mix veggies and then froze it. Bouillon shouldn't require a freezer... So I was very, very, very happy to find this recipe and will definitely try it, thank you so much. The main difference I learned is adding salt and spices at the end. Normally I made stock with all spices and salt and then just boiled it down until most water evaporated, then spread it over waxed paper and oven-dried it until dry. Then the texture was moldable like playdoh so I made little balls from it and can be stored anywhere really as it's already dry. So thank you again for this great recipe.

@@starfoxandstellar9917 it's in the comment already. Make a super strong stock, like way too much salt, spices that you like in your stock and all that and boil your veggies in it. Let it cool down in fridge after, take the fats away when they solidify and boil the stock until most of the water evaporates. Then put it into an oven on some baking paper or silicon paper so it doesn' stick (don't use aluminum foil, that sticks) and "bake" at 150 - 180 degrees F (80 C) with a slightly open oven and the fan turned on for a few hours for the rest of the water to evaporate. Then let it cool down and it should be moldable like playdoh. This takes a bit longer to melt when used but it will dissolve completely.

This looks legit, Onuawaa. I need to come pick mine. I once had this patient who always drank broth at dinner time. It was made with chicken feet, celery, carrot, onions and garlic. I guess that was her way of loading up on her collagen and all the goodness the broth had to offer. I don’t know why but watching this just made me think of her!!! Thanks so much for sharing ❤️❤️❤️

I appreciate seeing this, because I've been watching a few different videos of African traditional cooking, and for some reason, those bouillon cubes were always thrown in. I prefer an all natural diet, with no MSG or anything similar, and it was kind of offensive to me - I get this feeling that the corporations kind of invaded Africa and sold them things they didn't need. I have enough of that kind of thing in the USA already. So it's great to see the natural ingredients being used instead.

MSG is an extremely common naturally occurring substance. It's in cheese, meat, tomatoes and a shit tonne of other foods. The powder is the same chemical that has simply been extracted from seaweed.

I disagree with what Casper said. Most of the MSG we get is synthetic and there are many people who have severe reactions to it. I agree with you that the corporations have sold Africans on a lot of these ingredients which are now considered staples to African cooking but I’m sure are linked to much of the health problems we see in African cities ie high blood pressure, diabetes, etc. I found this recipe trying to find an alternate to Maggi cubes which are the secret to Senegalese omelette but I can’t be eating that crap on the reg.

I really love this idea. I think that using the chicken feet is so genius. For those of you who don't know where to find yeast extract, it can often be found at an international store. apparently ppl in australia spread it on toast 🍞. I found it easily in mine. This had to be better than them maggi cubes

I've been doing this for years. When you live in hurricane alley you learn or suffer. LOL I cook in a thermos using this as well. A handful of dried veggies some of this and you're good to go. I finish drying mine in the fridge too. After that I put them in a jar in the cabinet.

This is an excellent method of making buillion cubes, and I feel that the video was extremely well presented. However, I must point out that kosher salt has the same amount of sodium weight for weight. The only reason, that people think it is healthier, is because it is coarser, and therefore, one tends to use less salt, when measuring by spoon or cup.
