I make gravy from chicken or turkey drippings using fat from baking instead of butter and it's great! This is a recipe I'm going to use when I just need the gravy without the bird. Every once in a while my husband likes just mashed potatoes and gravy. Thank's for this recipe!

Cooking Roux on low heat 3-4 min White Roux 4-6 min Blonde Roux 6-8 min Brown Roux For the Ppl that wanna know how long or the stages of the colour of the goodnes 😘 Edit: Same amount of Flour and butter And please add all liquid at the same time Per 15g/ ~1tbs Butter|Flour 500ml/about 2 US cups If u wanna have better result mix the Cold Roux with Hot Liquid it makes it more delicious! W/o no big lumps at all by whisking the sauce ( the magic happens by this step aka the self thickening) And please use Homemade it's so more worth it, takes time but I promise you its from a (store) 1★ to (HM) 10★!

I made this tonight. First time I have ever made gravy from scratch. Turned out great! I didn't have chicken stock so I made some with a buillon cube. My hubby didn't believe that it didn't come from a package. *that is how I usually make it.

I've tried to make a good gravy but always failed. Thanks for showing us, Stephanie Manley, on how to make a perfect chicken gravy. I tried your way and it came out pretty good even though I don't have heavy cream. I use regular milk and it tasted good. If you add wine or rosemary or something to make it rich, is it possible? This is great for a quick weekday gravy. I find making my own stock makes it taste 10 times better but I only do it for a special meal (eg Christmas roast).

I have never tried gravy this way but will certainly give it a try.My gravy consists of the meat juices of the meat mixed with a little vegetable juice plus a small fried onion that I fry in butter and a oxo cube then I finally add my Yorkshire pudding mixture to it to thicken the gravy and usually turns out pretty yummy.

I’m not sure if you’re familiar with what a gravy whip is if you are I suggest you use it whenever making gravy’s... they work much more effectively and efficiently! If you’re not familiar with what a gravy whip is it’s basically a flattened out version of a whisk.. 🤓🤓🤓

I added chicken stock/broth the to gravy initially and then I added some cream at the end for additional cream at the end. I say initially it is a 32 ounce carton of chicken stock.

What was the exact amount of ingredients? Thanks. Got 4Tbs Butter then after that just indicated equal amount of flour? Would that be 4Tbs Flour? Then I guess the entire 32oz of stock 1/2 cup then 1/2 cup then 1 cup until all 32 oz is used.

you make rue with flour and butter and the amount determines how much you want to make. the more gravy you want, the more rue you will want to make..I have never measured how much I use, its usually a TBLSP or two of flour (to start with) and enough butter to make it the right consistency like you see in the video. the amount of liquid depends on how much rue you made.. you keep adding slowly and the gravy will thicken when it comes to a boil. if you keep adding too much, eventually it will not thicken up.. this is a learned recipe.. its not something you just measure out. you need to learn how to mix by sight. good luck and remember practice makes perfect. You can make a rue with with bacon grease as well instead of butter. This is also how white gravy is made using milk instead of chicken broth.

I always make homemade broth gravy. I just need a reminder. Love gravy ontop of stuffing. It is so yummy.❤️😊 The tip for making good gravy is in the whisking. I can make broth gravy, chocolate gravy. But still have an issue with Whitw gravy for biscuits. lol.

I would just like to say thank you for your chicken gravy video. I've been scanning through all these KZbin videos trying to find that right gravy that's easy an I was wondering how it would taste on chicken an dressing. Well I tried it, an Gosh it's really ok. I just added some boiled egg whites to it right before it got done. I left the yellow out. I used Swanson's Chicken Broth an its great. Thanks again for your big help.

I use this method to make gravy and it always has lumps and I have to strain it. What could I be doing wrong? Maybe adding too much liquid at once? That is the only thing I see that you do differently.

That could be it, I would start adding smaller amounts of liquid and stir until smooth with each addition. Let me know how it goes.

DO NOT heat your chicken stock before you add it or it will cook the roux like dumplings and your gravy will be lumpy. The rule for gravy is cold to hot or hot to cold. The roux should be whisked until it turns light brown for a nutty flavor. This activates the flower to absorb liquid so wait until the roux is well combined and actually begins to melt back into a liquid. The cold stock should be added to the hot pan one cup at a time for the first two times and whisked together until smooth each time. Then, pour in the rest of the stock and whisk until smooth. The gravy should thicken quickly, if the liquid to roux proportions are correct, so stir the gravy often until it is the desired consistency or it may burn. Any gravy made with a roux that reaches a bubbling simmer will separate and the fats will divide from the solids. Corn starch and arrow root actually thicken better when bubbling hot but these are for more clarified sauces and gravies. If your gravy separates you can turn down the heat, add a little cold milk, and bring it back together with a whisk. To make the gravy even more tasty you can simmer the stock in advance with a fresh rosemary sprig (keep it on the small side,) a bay leaf, a couple sprigs of thyme, two quartered cloves of garlic, and 3/4 cup of Chardonnay. Of course, you'll want to sieve out the greenery in a colander and then cool the stock for later use.

+Debbie Holland Hi Debbie. First, when I make this I don't use such a wide pan, I use a gravy pot, it's smaller and easier to control. Also, I don't spread the butter & flour all around. I tip the pan towards me when the butter melts into a small pool & then add the flour slowly til I have my paste - THEN add the broth slowly too - keeping it tipped near me until there's been enough added to BE a full pan. I find adding the broth slowly gives me more time to get the lumps out - add more broth, get lumps out, add more broth etc. I also don't use cream. Sauce made with cream or milk is Bechamel.

I always thought from scratch means use the drippings from the roast chicken. But I have made gravy from stock like this also. There is a new campbells product that is called Stock First which is greatly reduced and does not need as much simmering.

instead of using all that time cooking and whisking that flour, why not just throw it all in at once the butter, the flour, and the chicken stock and just boil it? will that not provide the same consistency?

I have never seen it done like this, it was never taught to me do it like this in school, or any cooking class I have taken. Being that it is taught how to do it like this, I assumed this was the correct way to make gravy.

when u throw all the stuffs together, the flour will have raw taste, and the butter may not be mixed in the gravy. Without browning the roux, you will end up with a blad gravy tasting like thick chicken stock.
