I made this with a bottom round roast with ok moons, carrots, green beans & sweet onions. I brown the onions while searing the roast. I put 2 cups of brotha & 1cup of red wine. Then while roast we as breathing, I scooped out 2 cups of the liquid & doubled this gravy recipe & it was fantastic.

I add soy sauce and red wine and spices when the dark roux is almost done. The soy sauce makes it darker and adds salt - use low sodium kind. The red wine takes it to a whole other level.

Thanks for this! Sometimes you need to put together gravy, and you don’t have the drippings around. I’ve never seen the roux cooked to such a dark color (I’m used to using it for cheese sauce or similar) but I bet that makes for a wonderful flavor base!!! I’ve also used real onions and garlic and just poured the gravy through a strainer (optional, but I like it that way.) Soy sauce is another great thing to add a teaspoon or two of (it was my mother’s secret ingredient in a lot of savory dishes.) It won’t taste like soy sauce, it just gives a real depth of flavor to things (also, it adds a nice color to chicken gravy so it doesn’t look so pasty/pale.) Thanks for this! Especially how cooked the roux is, I’m looking forward to trying it this way (I also tend to lean toward corn starch over a roux…that’s just how my mother did it, and how I learned to make it. But, I like the way the roux gravy tastes, also.)

I'm picky and I give people my real opinion based on their videos and ways of doing things BUT I thought this was a GREAT video and super simple way of doing a SOLID gravy within a short amount of time and all the spices you used just kept me into your presentation all the way thru the end. The only problem I have with beef or chicken broth is that they make the gravy taste too salty. Water works pretty well in place of broth. [Note: I recently tried beef broth with 50% less sodium, and it came out all right.]

What my granny has always used to control the flavor less or more is bouillon cube and water. Sprinkle however much powder into your hot water or add your water and then add however much bouillon powder you want into the gravy

I saute freshly chopped onion, garlic, and mushrooms in the butter and then add the flour to make my roux. Then proceed just like you show here. It's really good over hamburger patties and mashed potatoes.
